Happy Easter, friends!
I’m keeping it simple with our dinners this week, so my meal plan includes lots of sandwiches, roasted veggies, and other quickie meals that we can just throw together.
Here’s this week’s menu:
Sunday: Chicken Salad Sandwiches with Sweet Potato Wedges
Monday: Chicken & Black Bean Quesadillas
Tuesday: Avacado and Asparagus Egg Sandwiches
Wednesday: Mexican Ground Turkey Quinoa Skillet
Thursday: Tuna Melts with Roasted Brussels Sprouts
Friday: Out to dinner
Saturday: VACATION!

I have really been liking these “meal plan” posts–I have been reading them almost every Sunday to get myself pumped to plan our menu and go shopping.
Sandwiches are like the perfect meal – they’re filling, can include all 4 food groups, and are so satisfying! I think I need to include a tuna melt on my menu this week because that sounds SO good to me right now.
I appreciate the meal plan posts, too! It reminds me to plan meals ahead of time to stay on a healthy track during the week (at least).
