• Packed Full

    November 3, 2010

Today has been full of packing… and more packing.

I woke up bright and early with my husband, ate breakfast with him, and then got right down to business packing boxes. I made a serious dent, but I still have a lot to do. At least I’m making progress! ๐Ÿ˜€

After breakfast, I went to Body Pump, which was my first workout since Saturday’s 12-mile run. All of a sudden my marathon motivation is starting to really wane. Maybe it’s because my attention is elsewhere? I can’t seem to motivate myself to train for a marathonย and move into a new house. My brain is at capacity!! Hopefully, my motivation comes back very soon because I’m planning to run 16 miles by myself tomorrow morning. Oh, boy.

For lunch, I roasted some brussels sprouts with olive oil and Garlic Gold and reheated the leftover Pumpkin Dumplings from yesterday.

I melted a little bit of butter and sprinkled some grated Parmesan cheese on top.

Now that we are without a dining room table, Murphy seems to enjoy getting up close and personal with my food!

After lunch, I whipped up a batch of Butterscotch Chip Cookies from a recipe in Buddy Valastro’s new book:ย Cake Boss: Stories and Recipes from Mia Famiglia. (The nice people from TLC sent it to me last week!) Buddy used chocolate chips in his cookies, but I went with butterscotch chips instead. Personally, I think butterscotch is the way to go when it comes to cookies! These babies taste SO delicious!!

    Maren November 3, 2010 at 4:26 pm

I rather be… not waiting for class to start and instead doing something fun outside in our strange 80 degree weather.

    Leslie November 3, 2010 at 4:44 pm

I’d rather be the one cooking than being cooked for!
PS. Have you heard of or seen those Clover Food Trucks in Boston?

I’d rather be where I am now (onto my third Uni course) than doing the wrong course 4 years ago and taking the wrong path in life! Gotta love Bachelor of Exercise Sports and Sciences ๐Ÿ™‚

I love your blogs Tina! They have inspired me so much… this past week I have been making more of an effort to make food that are wholesome and healthy with lots of fresh ingredients. My partner is loving the fact that I’ve taken over the kitchen ๐Ÿ˜€

Keep the blogs coming, I read them everyday! (With the company of my own signature breakfast… tea with skim milk and a piece of wholemeal toast with crunchy peanut butter and honey hehe)

    xx Jardan

You know, I am having one of those days where I realize that being where I am is good – no matter where that is.

Lisa (bakebikeblog) November 3, 2010 at 4:57 pm

Argh I completely know what you mean! We are finalising the contruction of our new house and have to move in soon – that, combined with half ironman training and a full time job = one brain that is at capacity!!!

    Leah November 3, 2010 at 5:19 pm

    kyla November 3, 2010 at 6:33 pm

I’d rather be running around Forest Park here in STL than studying for a microbiology exam.

Mary (What's Cookin' with Mary) November 3, 2010 at 6:33 pm

For me today… it’s more like, I’d rather NOT be taking my husband to the airport in a 1/2 hour ๐Ÿ™

    stacey-healthylife November 3, 2010 at 6:35 pm

You had time and motivation to back cookies, I’m impressed.

Balanced Healthy Life November 3, 2010 at 6:41 pm

Lynn (The Actors Diet) November 3, 2010 at 6:42 pm

you are amazing, tina – baking in the midst of all of this!

Lacey @ Lake Life November 3, 2010 at 7:36 pm

    I’d rather be…healthy. I’ve been sick for a week ๐Ÿ™

    bobbi November 3, 2010 at 7:38 pm

you can always run 16 with Meghann and I on Sunday in Sanfran!

Duchess of Fork November 3, 2010 at 9:28 pm

I’d rather be on a sunny island with a book in one hand and a fruity drink in the other. My motivation starts to wane at this point in the school year. How long until winter break????

    Hannah November 3, 2010 at 10:47 pm

Aw, butterscotch chips don’t even exist in Australia! No fairsies! ๐Ÿ˜› Good luck with the rest of the packing!
