The rest of Monday was a walk in the park for me– both literally and figuratively.
After lunch, Mal and I took Murphy for a long walk around the neighborhood, which was followed by a visit to the park, so he could run around and stretch his little legs.

‘He’ meaning Murphy, not Mal!

Dinner
When we returned home, Mal and I joined forces and threw together a quick, easy, and delicious dinner. We had Soy-Glazed Cod with roasted broccoli and steamed green beans, which were tossed in olive oil and Garlic Gold.
Mal tackled the fish while I cooked the veggies.

This Soy-Glazed Fish recipe is really amazing. I made it for dinner only a couple of weeks ago, but it’s already back on our dinner menu again.

While Mal prepared and broiled the fish, I whipped up a batch of my favorite roasted broccoli. I just realized that my original post no longer includes photos (damn, blog hack!), so I’m reposting the recipe tonight.
Roasted Broccoli
Ingredients:
- 2 large heads of broccoli
- 2 tbsp sugar
- 2-3 tbsp olive oil
Directions:
Cut broccoli into florets.

Toss florets in olive oil and sugar.

Cover baking sheet with non-stick cooking spray (or tin foil) and spread broccoli florets on sheet. Broil for 5-7 minutes until edges of florets turn brown and crispy.

With two people cooking, dinner was a walk in the park.

Mal and I even ate at the dining room table this evening (instead of in front of the TV like we usually do). Fancy us!

Now, Mal and I are relaxing on the couch with the pug. Today was a good day.
G’night, friends! Yummy recipe coming in the morning!

Never thought to add sugar to broccoli! Look delicious!
Eating dinner at the table is so much fun
Can I just say how much I love that you guys eat a fancy meal with your BPA water bottles! This is so great!
Nice that your husband pitches in! My supposedly enlightened, progressive partner nary lifts a hand in the kitchen, except to swipe brownie batter:)
I love how that broccoli looks – does the sugar add a lot of sweetness or is it subtle? The idea of sweet broccoli sounds a little too weird for me!
I LOVE the picture of you with Murphy
Sugar on brocoli? sounds interesting, and looks nice
Tina, you are just glowing today! So glad you had a great day! Enjoy your evening.
you don’t know how jealous i am of your fish and dining room table! my husband’s a vegetarian and won’t let me cook seafood in the house, and we don’t have room for a dining room table!
roasted broccoli could quite possibly be my most favorite veggie to roast! I love when it gets all crispy!
I love when we actually sit at the dining table too! For weeks it has been covered with work stuff for Jason, so we’ve been eating in front of the tv. It is always more special when we eat at a table
I have *got* to try your magic addition of sugar to roasted broccoli! That must be why yours looks tastier than mine
I really need to try both the cod and the broccoli.. sounds amazing!
Looks like it was a gorgeous day in Boston!
This post is making me want some fish and roasted broc!!, looks good!!
Sugar on the roasted broccoli–so interesting! I’ve never tried it before, but I’m definitely intrigued. We’ve got roasted cauliflower on our menu for tomorrow night (a little olive oil, minced garlic, salt n’ pepper).
The pug pictures are adorable
Ah today was so gorgeous here too! I had quite a few beautiful walks in the park with my puppy this weekend and today today (since it was a holiday here in the great white north)
Interesting idea with the sugar on the broccoli. I like it!
I would never have thought to roast veggies with sugar!
I adore going for strolls in the park. They always calm me down.
YUM! I havent made roasted broccoli in ages!
I loveee roasted broccoli! I have never done it with sugar though, that sounds like it would be amazing! Love that picture of you and Murphy- so cute! Have a great night
That fish looks so delish! I will have to make a note to try that next time we have fish. I adore your pug…so cute:)
The fish looks amazing and so do the veggies. Roasted veggies are the best hands down!
What a healthy dinner – btw, I have that black SIGG cup.
I’ll definitely have to try this roasted broccoli. I’ll admit, it seems a little weird to dress the broccoli with sugar, but if you say it’s good, I’ll trust you
broccoli looks good ,,will try this nd let u knw,.
Sugar on broccoli! Huh. That’s a new one for me. I love the pairing of soy and broccoli, so you chose a yummy side dish.
I love walking and playing in the park! The cod looks great!
Soy-glazed fish sounds amazing!
That dinner looks great. Of course, I decided to work through dinner to get home earlier … so I won’t be eating until 10 or 11 tonight.
Sugar with broccoli? I don’t know about that…but it looks good!
that fish recipe sounds great…i’m always down with easy, delicious food! and that picture of you and murphy is PERFECTION

Fish for dinner is so easy and delicious.
Looks like a fun day! Soy-Glazed Cod sounds so good!
Soy and brown sugar is such an amazing glaze for fish! I love it on salmon, but I’ve never tried it on cod!
I’ve never attempted to roast veggies in the oven. It looks like it’s fairly easy though.
That picture of you and Murphy is adorable. Definitely one for the frame!
I recently tried roasted broc & LOVE IT!
I’m also with you on the eating in front of the TV, but usually I’m in front of the computer. Every health article I read frowns on it but it’s a hard habit to quit!
Thank you for posting such a simple broccoli recipe! I was never that great of a cook so I’m always looking for EASY ways to add tasty veggies to my meal.
