Walk in the Park

October 11, 2010

The rest of Monday was a walk in the park for me– both literally and figuratively.

After lunch, Mal and I took Murphy for a long walk around the neighborhood, which was followed by a visit to the park, so he could run around and stretch his little legs.

Dinner

When we returned home, Mal and I joined forces and threw together a quick, easy, and delicious dinner. We had Soy-Glazed Cod with roasted broccoli and steamed green beans, which were tossed in olive oil and Garlic Gold.

Mal tackled the fish while I cooked the veggies.

This Soy-Glazed Fish recipe is really amazing. I made it for dinner only a couple of weeks ago, but it’s already back on our dinner menu again.

While Mal prepared and broiled the fish, I whipped up a batch of my favorite roasted broccoli. I just realized that my original post no longer includes photos (damn, blog hack!), so I’m reposting the recipe tonight.

Roasted Broccoli

Ingredients:

  • 2 large heads of broccoli
  • 2 tbsp sugar
  • 2-3 tbsp olive oil

Directions:

Cut broccoli into florets.

Toss florets in olive oil and sugar.

Cover baking sheet with non-stick cooking spray (or tin foil) and spread broccoli florets on sheet. Broil for 5-7 minutes until edges of florets turn brown and crispy.

With two people cooking, dinner was a walk in the park.

Mal and I even ate at the dining room table this evening (instead of in front of the TV like we usually do). Fancy us! ;-)

Now, Mal and I are relaxing on the couch with the pug. Today was a good day.

I love how that broccoli looks – does the sugar add a lot of sweetness or is it subtle? The idea of sweet broccoli sounds a little too weird for me!

I love when we actually sit at the dining table too! For weeks it has been covered with work stuff for Jason, so we’ve been eating in front of the tv. It is always more special when we eat at a table :)

Sugar on the roasted broccoli–so interesting! I’ve never tried it before, but I’m definitely intrigued. We’ve got roasted cauliflower on our menu for tomorrow night (a little olive oil, minced garlic, salt n’ pepper).

I recently tried roasted broc & LOVE IT!

I’m also with you on the eating in front of the TV, but usually I’m in front of the computer. Every health article I read frowns on it but it’s a hard habit to quit!
