I love this photo!!!

On our way home from Newport this afternoon, Murphy definitely smelled home as we drove down our street! He jumped off my lap and stuck his head right out the window!
Breakfast
This morning, Mal and I enjoyed a nice, leisurely breakfast with his parents at the Ocean Breeze Cafe. Clearly, Mal and I love this place. We ate there 3 times in 24 hours!
For my meal, I ordered a grilled Pistachio-Chocolate Chip Muffin. Clearly, I love the Pistachio-Chocolate Chip Muffins from the Ocean Breeze Cafe. I ate two of them in 24 hours!

On the side, I had a fresh fruit cup.

And a scrambled egg and pumpkin spice iced coffee with cream. Clearly, it was a fantastic breakfast!

After breakfast, Mal and I packed our things, said goodbye to his parents, and hit the road to pick up Murphy from our friend’s house.

Murphy had a great time playing with his doggie friends, Helga, Harley, and Darla, but he was excited to see us when we arrived. Dad definitely smelled like home!

After a fun-filled weekend, Murphy was totally exhausted. He’s been sleeping on and off all afternoon.

Snack
Once I unpacked and cleaned up the house, I took a little break for an afternoon snack. I made myself a piece of whole wheat toast with peanut butter and apple butter, which was a gift from my blog buddy, Cynthia!

Dinner
We desperately need to go grocery shopping, so I dug deep into our pantry and freezer to come up with dinner this evening. I found a bag of frozen Popcorn Fish and some wild rice, which I cooked in vegetable broth. Dinner actually turned out quite well– much better than I expected!

On my plate: popcorn fish with ketchup.

Wild rice.

And arugula salad with grape tomatoes and Annie’s Goddess Dressing.

Dessert
For dessert, I also dug deep into the pantry. I found peanut flour, cocoa powder, and vanilla frosting mix.

The result: Peanut Butter Cup Cake!!

Peanut Butter Cup Cake
Makes 12 servings
Ingredients:
Cake:
- 1 cup peanut flour
- 2 tbsp sugar
- 1 tsp baking powder
- 1/4 tsp sea salt
- 1 tbsp baking cocoa
- 1 tsp vanilla
- 1 cup vanilla yogurt
- 1 egg
Frosting:
- 1/4 cup vanilla frosting of your choice
- 1 tbsp peanut butter (chunky or smooth)
Directions:
- Preheat oven to 350 degrees.
- Spray 8″ X 8″ baking pan with non-stick cooking spray.
- In a large mixing bowl, combine cake ingredients until smooth.
- Spread cake batter in prepared baking pan and bake for approximately 20 minutes until cake is cooked all the way through.
- Meanwhile, combine frosting with peanut butter. Stir until fully blended.
- Let cake cool completely before frosting.
- Cut into 12 pieces, serve, and enjoy!

Ok, I have to admit that I didn’t love this cake. I enjoyed it quite a bit, but I’ve definitely eaten much better peanut butter-chocolate cake in my life. Mal, however, really liked this dessert– perhaps because it wasn’t super sweet? When I eat cake, I like it moist, sweet, and a little gooey. This cake really wasn’t any of those things, but maybe that’s how you like your cake? If so, definitely give this recipe a try!
Mal and I have a serious backlog of TV shows on our DVR, so that’s our plan for the rest of the night.
Good night, folks!
P.S. Where the heck did this weekend go!?!

that pic of murphy is priceless! but be careful – i know someone whose doggie’s eye got hurt by flying debris while hanging out the window!
Murphy makes a great doggie model!
I must admit that Helga, Harley, and Darla are some of the oddest dog names I’ve ever heard. Do you know the story behind these names?
Wow how did you get that picture?! I would have been scared of dropping the camera in the street.
Gosh, I love hearing about Murphy’s adventures!
I’m thinking about getting a pug too, how did you decide where to get Murphy from?
Any tips for how to find the perfect puppy?!
cake looks so yum..
Okay, I officially LOVE that photo of Murphy.
That picture of Murphy is to die for – soooo cute! And the Peanut Butter Cup Cake looks decadent and moist – can’t wait to test it out at home. Looks like a good weekend treat.
@Allie (Live Laugh Eat): Hardly ever, actually! He’s the Energizer Bunny!
@F.I.T.: I’m pretty flexible with what I eat, so frozen fish is fine to me.
@Krystina: It’s thicker and more dense.
@Lacey @ Lake Life: No, sorry. I believe they were all rescue dogs.
@Mads: We researched a number of breeders and visited the one we picked a number of times before making a decision. We also asked the breeder a million questions and asked to see documentation of medical records, etc.
I actually laughed out loud at that picture of Murphy! So funny!
I totally LOL-ed when I saw Murphy’s face in the first picture. Too funny!
The Ocean Breeze Cafe looks like quite the place! I’ve never even heard of the pistachio chocolate chip combo, but it works with all the other nuts so why not?
LOL love the picture of Murphy
And your breakfast looks EXCELLENT. And just to be obnoxious about what I’m learning in school, here’s a fun fact for you – wild rice isn’t actually rice, it’s actually a seed from water plants. Interesting, right?!
The pistachio muffins look incredible. Those are on my list of “to make.” Glad you enjoyed your trip!
Ok A. How on earth were you able to snap that picture B. I love murphy’s face! So freaking cute!
Something about a dog with his head out the window that just say pure joys. So many smells so fast. Murphy looks like he’s in heaven.

A grilled muffin is brilliant! I need to get one that!
Those grilled muffins sounds amazing- a)because they’re grilled and b) because they’re pistachio! (and green!!)
What a great photo of Murphy!!
I love that you spent time around my old diggs. Used to live right on Thames. How I miss it and the Ocean Breeze Cafe!
Th pic of your dog made my day. So cute! When our dog, Hurley, sees her crate she thinks she’s grounded.
You needto blow up that picture of Murphy and hang it in your home!
OK that pic best be your new desktop background. OMG too precious!
I love the pics of Murph! They always brighten up my day.
I use Goddess Dressing a lot. I prefer the Trader Joe’s version though. YUM!
