Smells Like Home

On our way home from Newport this afternoon, Murphy definitely smelled home as we drove down our street! He jumped off my lap and stuck his head right out the window! :lol:

Breakfast

This morning, Mal and I enjoyed a nice, leisurely breakfast with his parents at the Ocean Breeze Cafe. Clearly, Mal and I love this place. We ate there 3 times in 24 hours!

For my meal, I ordered a grilled Pistachio-Chocolate Chip Muffin. Clearly, I love the Pistachio-Chocolate Chip Muffins from the Ocean Breeze Cafe. I ate two of them in 24 hours! ;-)

On the side, I had a fresh fruit cup.

And a scrambled egg and pumpkin spice iced coffee with cream. Clearly, it was a fantastic breakfast! ;-)

After breakfast, Mal and I packed our things, said goodbye to his parents, and hit the road to pick up Murphy from our friend’s house.

Murphy had a great time playing with his doggie friends, Helga, Harley, and Darla, but he was excited to see us when we arrived. Dad definitely smelled like home!

After a fun-filled weekend, Murphy was totally exhausted. He’s been sleeping on and off all afternoon.

Snack

Once I unpacked and cleaned up the house, I took a little break for an afternoon snack. I made myself a piece of whole wheat toast with peanut butter and apple butter, which was a gift from my blog buddy, Cynthia! :-D

Dinner

We desperately need to go grocery shopping, so I dug deep into our pantry and freezer to come up with dinner this evening. I found a bag of frozen Popcorn Fish and some wild rice, which I cooked in vegetable broth. Dinner actually turned out quite well– much better than I expected!

And arugula salad with grape tomatoes and Annie’s Goddess Dressing.

Dessert

For dessert, I also dug deep into the pantry. I found peanut flour, cocoa powder, and vanilla frosting mix.

The result: Peanut Butter Cup Cake!! :mrgreen:

Peanut Butter Cup Cake

Makes 12 servings

Ingredients:

Cake:

  • 1 cup peanut flour
  • 2 tbsp sugar
  • 1 tsp baking powder
  • 1/4 tsp sea salt
  • 1 tbsp baking cocoa
  • 1 tsp vanilla
  • 1 cup vanilla yogurt
  • 1 egg

Frosting:

  • 1/4 cup vanilla frosting of your choice
  • 1 tbsp peanut butter (chunky or smooth)

Directions:

  • Preheat oven to 350 degrees.
  • Spray 8″ X 8″ baking pan with non-stick cooking spray.
  • In a large mixing bowl, combine cake ingredients until smooth.
  • Spread cake batter in prepared baking pan and bake for approximately 20 minutes until cake is cooked all the way through.
  • Meanwhile, combine frosting with peanut butter. Stir until fully blended.
  • Let cake cool completely before frosting.
  • Cut into 12 pieces, serve, and enjoy!

Ok, I have to admit that I didn’t love this cake. I enjoyed it quite a bit, but I’ve definitely eaten much better peanut butter-chocolate cake in my life. Mal, however, really liked this dessert– perhaps because it wasn’t super sweet? When I eat cake, I like it moist, sweet, and a little gooey. This cake really wasn’t any of those things, but maybe that’s how you like your cake? If so, definitely give this recipe a try!

Mal and I have a serious backlog of TV shows on our DVR, so that’s our plan for the rest of the night.

@Mads: We researched a number of breeders and visited the one we picked a number of times before making a decision. We also asked the breeder a million questions and asked to see documentation of medical records, etc.

I totally LOL-ed when I saw Murphy’s face in the first picture. Too funny!
The Ocean Breeze Cafe looks like quite the place! I’ve never even heard of the pistachio chocolate chip combo, but it works with all the other nuts so why not? :-D

LOL love the picture of Murphy :D And your breakfast looks EXCELLENT. And just to be obnoxious about what I’m learning in school, here’s a fun fact for you – wild rice isn’t actually rice, it’s actually a seed from water plants. Interesting, right?!

Something about a dog with his head out the window that just say pure joys. So many smells so fast. Murphy looks like he’s in heaven.

After discovering the combination last year, I went through a period of having peanut butter and apple butter sandwiches for lunch everyday! so yum- Have you tried peanut butter and pumpkin butter? even better.
