That’s right, bloggies! Carrots ‘N’ Cake turns 2 years old today!
My first blog post was on the afternoon of February 3, 2008.
I can’t believe that I’ve been blogging for two years! Time flies when you’re having fun!
It’s even harder to believe that I have photographed just about every meal that I’ve eaten for 2 years! That’s a lot of photos!
In the past year, Carrots ‘N’ Cake has come a long way. A number of amazing opportunities have come about due to a little blog that I started to keep myself on track for my wedding day. Who would have guessed!?! Here are just some of the opportunities that CNC has been fortunate enough to have in the past year:
- Landed a book deal
- Helped plan the Healthy Living Summit
- Quit my full-time job to work at NuVal
- Started writing for Health.com
- CNC receives some media coverage
- Attended BlogHer Food in San Francisco
- Attended the Foodbuzz Festival in San Francisco
- Won a few blogging awards
- Attended POM Harvest Blogger Tour
- Visited Sonoma with my blog buddies
- Vacation with fellow bloggers in the Carolinas

And, what’s really cool about my blog birthday is that it is also National Carrot Cake Day! How’s that for a coincidence?!? It was meant to be!
Having a healthy living blog has been one of the most rewarding projects of my life, and I want to thank all of you who read everyday. You have helped make CNC what it is today! Plus, each of your comments, emails, and conversations motivate me to continue blogging and better myself each and every day! So, thank you readers!!!
Breakfast
In honor of my blog birthday (and National Carrot Cake Day), I made Angela’s 3-Minute Breakfast Carrot Cake. I substituted canned pumpkin for the banana in her recipe– I was hoping for bright orange oats!

I made my Breakfast Carrot Cake last night, let it sit in the fridge, and nuked it in the microwave this morning. It was SO delicious! I ended up adding a scoop of peanut butter to it, too. Mmm!! Excellent blog birthday breakfast!

I also had a yummy iced latte made with vanilla soy milk and a sprinkle of cinnamon on top.

My Iced Latte “Secret”
Sooooo, a lot of you have been wondering how I make my delicious, frothy, iced lattes. Well, the secret is about to be revealed! Finally, right?!?

Introducing the mypressi TWIST!!!!!

I am TOTALLY obsessed with this thing!
The mypressi TWIST is a portable espresso machine that is so easy to use. It produces espresso just like a traditional espresso machine, but it’s much more convenient (and portable). The TWIST’s unique “pneumatic engine” requires no external power– it uses standard gas cartridges, like for whipped cream. All you need to do is add ground espresso and hot water, and out comes freshly brewed espresso in no time at all. It’s awe-some!
At first, I thought this contraption seemed really intimidating, but after just one use, it was a piece of cake! Now, I made iced lattes all of the time.

SO, I just got my mypressi in the mail today!! woo hoo! so excited. this is gonna so help my latte problem. BUT i am so confused! what kind of coffee grinds do you use? what do you recommend?
