Scharffen Berger Giveaway

Ahhh, it’s here!!! The 12 Days of Giveaways on Carrots ‘N’ Cake!

I’m kicking of the celebration with two of my favorite things: (cooking) books and chocolate!

DSC01327

Have you tried Scharffen Berger chocolate? Well, it’s a little taste of heaven.

You may or may not know that Scharffen Berger had a cameo appearance in the August released blockbuster Julie and Julia. The brand was a favorite of Julia Childs.

The folks at Scharffen Berger have offered to giveaway 3 prize packages that include a paperback copy of the Julie and Julia book, a Scharffen Berger baking bar, and chocolate bar branded for the film.

To Enter: Leave a comment about your favorite chocolate recipe. Bonus points for a Julia Child recipe! ;-)

I will randomly pick 3 winners tomorrow morning. Good luck! :-D

This recipe isn’t the most creative but I made homemade chocolate cupcakes for my friend’s bachelorette party. They were delicious and I decorated them with hot pink icing and sprinkles. After making cupcakes from scratch I will NEVER buy a box mix again. They are so much better tasting and you know everything that goes in them. Happy Holidays to all!

My favorite chocolate recipe? It was probably this really dense chocolate cake recipe that my sister and I picked out of one of her chocolate cookbooks (she has about five of them). No one else in my family liked it, but I LOVED it. I think I ended up eating 1/4th of the cake in one sitting at one point while everyone looked at me in disgust. It kind of had a hint of sour cream in the batter…but I don’t think that was an ingredient! I always tease my sister and tell her make it again, but no one else thinks it’s worth the work!

What a great way to kick off December! My favorite chocolate recipe is from an ex-boyfriends mom, they are called “Chinese New Years Cookies”. You melt semi sweet chocolate chips, milk chocolate chips and butterscotch chocolate chips then you mix in crispy chinese noodles and place them in little piles on wax paper. SO YUMMY!

Julia Child’s Chocolate Truffles are a yummy Christmas favorite. Here’s the recipe if anyone’s interested
    8 oz melted chocolate
4 oz slightly softened unsalted butter
    2-3 T dark rum
    ¾ c ginger snaps, pulverized”
With a mixer beat butter into chocolate, stir in rum, then blend ginger snaps into mixture. Chill until stiff. Roll in hands into 1″ balls. Roll in powdered cocoa. You may also roll some in confectioner’s sugar to have alternate colors.

    Chocolate Mousse
    Six to eight servings
    This is Julia Child recipe!

6 ounces (170g) bittersweet or semisweet chocolate, chopped
6 ounces (170g) unsalted butter, cut into small pieces
    1/4 cup (60ml) dark-brewed coffee
    4 large eggs, separated
    2/3 cup (170g), plus 1 tablespoon sugar
    2 tablespoons (30ml) dark rum
    1 tablespoon (15ml) water
    pinch of salt
    1/2 teaspoon vanilla extract

    1. Heat a saucepan one-third full with hot water, and in a bowl set on top, melt together the chocolate, butter and coffee, stirring over the barely simmering water, until smooth. Remove from heat.

    2. Fill a large bowl with ice water and set aside.

    3. In a bowl large enough to nest securely on the saucepan of simmering water, whisk the yolks of the eggs with the 2/3 cup of sugar, rum, and water for about 3 minutes until the mixture is thick, like runny mayonnaise. (You can also use a handheld electric mixer.)

    3. Remove from heat and place the bowl of whipped egg yolks within the bowl of ice water and beat until cool and thick, as shown in the photo above. Then fold the chocolate mixture into the egg yolks.

    4. In a separate bowl, beat the egg whites with the salt until frothy. Continue to beat until they start to hold their shape. Whip in the tablespoon of sugar and continue to beat until thick and shiny, but not completely stiff, then the vanilla.

    5. Fold one-third of the beaten egg whites into the chocolate mixture, then fold in the remainder of the whites just until incorporated, but don’t overdo it or the mousse will lose volume.

    6. Transfer the mousse to a serving bowl or divide into serving dishes, and refrigerate for at least 4 hours, until firm.

Storage: The mousse au chocolat can be refrigerated for up to 4 days.

Last year right before christmas, my mother-in-law gave me 8-6oz bars of Scharffen-Berger 99% Cacao unsweetened Dark Chocolate bars since she knows I love to bake. There was a recipe inside the bar packages for “chocolate drop cookies” so I made those with one of the bars and they turned out soo good that they are now added to my list of christmas cookies that have to be made each year!

I have two favorite chocolate recipes. The first I just tried this summer is Julia Child’s Chocolate and Almond cake. It’s pretty easy to make and tastes like heaven. Here’s the link to the recipe: http://www.oprah.com/recipe/food/recipesdesserts/20090806-orig-julia-child-chocolate-almond-cake. My other favorite recipe is my grandma’s earthquake cake that she makes for my birthday every year. It’s german chocolate cake with walnuts and coconut on the bottom. To make the earthquake effect mix 8 oz cream cheese with some powdered sugar and drop the mixture on top of the cake by spoonfuls before baking. It’s sooooo good.

    i love these!

    Oatmeal Chocolate Chip Cookies
    1 cup butter, room temperature
    1 cup sugar
    1 cup brown sugar
    2 large eggs
    2 tbsp milk
    2 tsp vanilla extract
    2 cups all-purpose flour
    1 tsp baking soda
    1 tsp baking powder
    1 tsp salt
2 1/2 cups oats (rolled or “quick,” but not “instant”)
2 cups chocolate chips (about 12-oz.)

Preheat the oven to 350F. Line a baking sheet with parchment paper.
In a large bowl, cream together the butter and the sugars until mixture is light in color. Beat in the eggs one at a time, followed by the milk and the vanilla extract.
In a medium bowl, stir together the flour, baking soda, baking powder and salt. Either by hand or with the mixer on low speed, gradually beat the flour in to the sugar mixture until just incorporated.
Stir in the oats and chocolate chips by hand.
Drop 1-inch balls of dough onto the cookie sheet, placing about 1 1/2 inches apart so they have room to spread.
Bake at 350F for 10-13 minutes, until golden brown at the edges and light golden at the center.

I make peanut butter bonbons each holiday that take FOREVER – the dough itself comes together quickly but then has to be rolled into dozens and dozens of tiny little balls. Then each ball has to be individually dipped in chocolate, spaced perfectly then refrigerated. It takes FOREVER and it’s totally worth it. They’re like little balls of Heaven!

Mmm chocolate! I love chocolate like any good foodie however, I can’t stand chocolate chips! I make chocolate chip cookies for my family all the time, but I always eat around the chip pieces. Chocolate chip cookie dough & mint chip are my favorite ice cream but you better believe I leave all the chips at the bottom of my bowl instead of eating them!!! Unfortunately, I grew up in the time of Rachel Ray & Paula Deen so I really don’t have any of Julia’s cookbooks. Instead, I turned to my handy dandy google search and found one of Julia Childs recipes that I will surely be trying out soon!!…The Reine de Sheba cake was in the movie and it looks absolutely delicious!! I could have faked it and just found a Julia Child recipe but I decided to share with you my very Southern grandmother’s homemade fudge. It’s TO DIE FOR!

Put into mixer bowl and mix:
    l2 oz.(2 cups) chocolate chips
    8 oz. marshmallow creme
    1 tsp vanilla
    1 stick butter

Next put this in into a large saucepan

    1 large carnation milk
    4 1/2 cups sugar

When this reaches a rolling boil, lower heat cook for 13 minutes. Then pour slowly into the mixing bowl (with other ingrediants), add 2 cups pecans and stir. Put into buttered 9 by 13 pan and let it stand until firm.

If I’m in the chef’s hat, I’d have to say chocolate-chocolate cookies or really any sort of chocolate cookie that requires constant shuttling to and from the mixing bowl (fingers a-ready!) and a good-smelling kitchen that lasts a long time.

(If I’m the eater, though, the best recipe goes to David Chang at Momofuku Milk Bar in New York. The “chocolate-chocolate cookie” (not the “compost cookie” that’s uber famous) is undeniably the most delicious chocolate-anything I’ve ever tried, and that’s really saying something! I have many sweet teeth!)

    Ingredients:Serves 6–8

    Kitchen Supplies:

Round cake pan , 8 inches in diameter and 1 1/2 inches deep
    3-quart mixing bowl
    Wooden spoon or Electric beater
    Rubber spatula
    Cake rack
    Cake:

4 ounces or squares semisweet chocolate , melted
    2 Tbsp. rum or coffee
1/4 pound or 1 stick softened butter
2/3 cup granulated sugar to mix with butter
    3 egg yolks
    3 egg whites
    Pinch of salt
1 Tbsp. granulated sugar to beat with egg whites
    1/3 cup pulverized almonds
    1/4 tsp. almond extract
1/2 cup cake flour , scooped and leveled, turned into a sifter
    Chocolate-Butter Icing
To make cake: Preheat oven to 350 degrees.

Butter and flour the cake pan. Set the chocolate and rum or coffee in a small pan, cover, and place (off heat) in a larger pan of almost simmering water; let melt while you proceed with the recipe. Measure out the rest of the ingredients.

Cream the butter and 2/3 cup of sugar together for several minutes until they form a pale yellow, fluffy mixture. Beat in the egg yolks until well blended.

Beat the egg whites and salt in a separate bowl until soft peaks are formed; sprinkle 1 Tbsp. sugar and beat until stiff peaks are formed.

With a rubber spatula, blend the melted chocolate into the butter and sugar mixture, then stir in the almonds, and almond extract. Immediately stir in one fourth of the beaten egg whites to lighten the batter. Delicately fold in a third of the remaining whites and when partially blended, sift on one third of the flour and continue folding. Alternate rapidly with more egg whites and more flour until all egg whites and flour are incorporated.

Turn the batter into the cake pan, pushing the batter up to its rim with a rubber spatula. Bake in middle level of preheated oven for about 25 ·minutes. Cake is done when it has puffed, and 2 1/2 to 3 inches around the circumference are set so that a needle plunged into that area comes out clean; the center should move slightly if the pan is shaken, and a needle comes out oily.

Allow cake to cool in the pan for 10 minutes. Run a knife around the edge of the pan, and reverse cake on the rack. Allow it to cool for an hour or two; it must be thoroughly cold if it is to be iced.

Or milk chocolate and caramel. So many options and shortbread cookies are SOOO easy to make – I only use 3 or 4 ingredients to make them usually. Buckeyes:
    1 1/2 lbs confectioners’ sugar
1 16 oz jar crunchy peanut butter
    1 cup butter, softened
    1 12 oz pkg semi-sweet chocolate chips
1 tablespoon Crisco or vegetable oil

In the bowl of a food processor, add 1/2 the quantity of the butter, sugar, peanut butter. Process until well combined.

Shape into 1 inch balls. Refrigerate. Repeat this process with remaining ingredients.

In the top of a double boiler, combine Crisco or vegetable oil and chocolate, simmering and stirring until chocolate has melted. (If you don’t have a double boiler, melt it in a small metal bowl over boiling water in a saucepan; alternatively, use a microwave). When melting chocolate, be careful not to allow any moisture to touch it (or steam), as this will cause the chocolate to seize and you’ll have to start over!

Dip each ball in chocolate until partially coated. Place on wax paper or silicone sheets.
Store, refrigerated, in an airtight container.

How on earth am I supposed to pick JUST ONE recipe! I guess I will have to go with Christmas Bark (’tis the season afterall).

    •1 sleeve of saltine crackers
    •1 cup butter
    •1/2 cup light brown sugar
    •12 oz semisweet chocolate chips

    1. Preheat oven to 350 degrees.
    2. Line a jelly roll pan with parchment paper, folding the edges up so the sides are covered as well. Lay the saltines in a single layer on the parchment paper.
    3. Melt butter and brown sugar in a medium saucepan over medium to medium-high heat. Bring to a boil and cook for 3 minutes, stirring constantly. Adjust temperature as necessary. Pour butter-brown sugar mixture over the saltine crackers. Spread the mixture evenly, working quickly as it will begin to cool. Put jelly roll pan in over and bake for 15 minutes.
    4. Remove the pan from oven and immediately sprinkle with the chocolate chips. Wait a few minutes for the chips to soften from the heat. When the chips are soft enough, spread them evenly over the entire layer of sugar covered crackers. Immediately sprinkle chopped pecans on top.
    5. Put the pan into the refrigerator and refrigerate for one hour. When the bark has finished cooling, remove the pan from refrigerator. Using your hands or a pizza cutter, break or cut the bark into pieces.

I’d have to say… I’ve never really used chocolate! I just got into food and cooking as I began my recovery from anorexia, and I haven’t had the gumption to try introducing chocolate into my diet yet (except the odd piece or two at Halloween).
