Eggland’s Best Holiday Recipe Contest

Thanks to everyone who entered the Eggland’s Best Holiday Recipe Contest! We received SO MANY delicious, holiday-inspired egg recipes! :-D

The folks at Eggland’s Best actually got to sample a number of these recipes firsthand. Lucky ducks! I heard that they had a really tough time picking the top 3 recipes from the bunch.

Here’s a sampling of the recipes that were part of the Eggland’s Best taste testing:

  • Hearth Healthy Pumpkin Bread
  • Pumpkin Maple French Toast
  • Sweet Potato Pancakes
  • Rosemary & Goat Cheese Turkey Fritters
  • Spinach and Pepper Christmas Pie
  • Eggnog Pie
  • Dark Chocolate Cookie Crumb Pie with Peppermint Meringue
  • Pumpkin Cranberry Muffin Top Cookies
  • Apple Cinnamon Cornbread
  • Brown Sugar Topped Banana Bread
  • Smoked Salmon Croque-monsieur
  • Veggie Garden Scrambled Eggs (aka Christmas Eggs)
  • Christmas Egg Brunch
  • Mint Chocolate Egg Nog

Even the CEO of Eggland’s Best, Charlie Lanktree, took part in the recipe testing action.

If you’re curious who cooked all of this delicious food, Eggland’s Best has two home cooks, who are really good at just that, home cooking. They aren’t professionals– they’re just good cooks, who enjoy making and trying different things.

Without further ado, here are the winners!!!

GRAND PRIZE WINNER:

Heather Cavanagh – Christmas Egg Brunch

Ingredients:

  • 1 lb sausage, browned
  • 6-10 Eggland’s Best Eggs
  • 6-8 pieces of bread cubed
  • 2 cups milk
  • 1 teaspoon dried mustard
  • 1 teaspoon grated onion
  • 2 cups cheese shredded

Directions:

  • Combine eggs and milk, beat well.
  • Add mustard, bread, sausage and 1.5 cups of cheese to the egg/milk mixture.
  • Divide mixture to greased Christmas muffin tins.
  • Use remaining 0.5 cup of cheese to spread on top of the egg mixture.
  • Bake at 350 degrees for about 15-30 minutes.

The second place winner will receive a 6 month’s supply of eggs and the third place winner will receive a 3 month’s supply of eggs, along with some fun goodies from Eggland’s Best.

    Being a diabetic, I usually have to avoid a lot of the holiday treats this time a year. After doing some Internet research I found a nutritionist by the name of Rose Cole who has great SUGAR-FREE Recipes that are soooooo delicious.
