I specifically remember wanting to try that shells, cheese, and macaroni casserole that you made. I forget the name of it but it looked amazing! Casseroles are great to make ahead of time so that you can “heat and eat” a quick healthy meal.

However, I think any recipe that includes “real” food and is “simple” to make sounds perfect. School gets stressful, and I don’t have tons of time to plan elaborate meals. It would be so nice to have a book full of amazing, easy, and healthy recipes!

    DEFINITELY the mac n cheese!

Haha I definitely think I should get an extra point for this story:
So when I was applying to colleges, Yale was one of the schools I was considering. When I visited, I had an interview with one of the admissions staff. One of the questions they asked me was “If you could have lunch with anyone in the world – from the past, present, dead or alive – who would it be, and why?” You wanna know what I said? Martha Stewart. To the effing admissions deciders at Yale University! Haha I won’t give you the whole novel, but I had quite excellent reasons for choosing her if I do say so myself. Martha’s my girl. ;)

I am kicking myself but I remember a long time ago (sometime last year) you made a Real Simple recipe that looked soooo amazing and now I can’t remember or find exactly what it was. This is actually how I discovered your blog! I beleive it was something along the lines of pinto beans? Do you recall a main dish you made using these beans? I also remember you raving about it for days and now I will probably spend the next 15 min searching your archives to find this recipe because I just reminded myself of how badly I wanted to make it. ;)

    Thanks Tina!

Easily the mac and cheese you made with the cauliflower. Although the pizza from the other night looked like a good combo.
