My favorite recipe with lentils is vegetarian chili! The lentils help to add a “meaty” substance to the mix — so much so that my meat-eating boyfriend loves it!

I lived in Southern Spain for 5 months and they use lentils and chick peas ALL the time. My favorite was my host mom’s homemade lentil soup – I never got the recipe but I’ve been itching to try and recreate it, I’ve missed it so much!

My favorite lentil recipe is tossing cooked lentils, diced carrots, diced red peppers, arugula, and crumbled feta cheese in a lemon vinaigrette. You can also add toasted pine nuts and sliced basil if you want. Serve on a hot summer night with toasted ciabatta and a bottle of good wine :)

My friend makes an Indian lentil dish call Moong Dal. I like to eat it with garlic naan. Yum!

I make lentil and sausage soup at least once a week in the winter…and when we’re not eating lentil soup, we’re eating split pea with ham soup. Man I love lentils and peas!!!

My favorite bean recipe is a Southern favorite called Hoppin’ John. Usually we eat it on New Year’s Day for good luck, but with the rice, tomatoes and ham in it I think it is good anytime of year! I would love to win this lifetime supply of lentils.

I really like the Ina Garten recipe. It’s cooked with aromatics, chicken stock and tomato paste. Served with Salmon. Delish!

I love to boil dried peas, puree cooked peas with a little cumin and/or sesame seasoning-a great side dish for burgers or chicken.

I recently fell in love with lentils! As a personal trainer, I need adequate protein but don’t want to resort to shakes & get sick of eating a lot of meat, eggs, or cottage cheese. Anywho, last week I made a lentil, walnut, & feta salad with balsamic vinegar. I had a bit of inspiration ;) … it was absolutely delish!

I love making lentil soup in the winter and then freezing the leftovers to have anytime throughout the year. I make the lentil soup with lots of veggies (onions, celery, carrots and leeks) and serve it with crusty bread for dipping and a creamy stout to wash it all down!

I’m obsessed with lentils. I eat them frequently but I think that my favorite is doing a Lentil Red Curry with a side of roasted vegetables. They are super versatile and i’ve convinced many of my friends to try them with this dish!
