Guest Post: Megan Reviews and Bakes with Barney Butter

Thanks to Tina, I received a jar of Barney Butter on my doorstep! I had to taste it right away after hearing so many wonderful things about it! It did not disappoint! It is full of roasted almond flavor and it is the perfect consistency! Barney Butter makes it’s way into my oatmeal quite frequently!

Of course, I wanted to make a recipe with this lovely butter. I wanted to find a recipe that only involved a little of the almond butter, because I wanted to keep enough for a few more weeks of almond butter oatmeal. I found a recipe for Peanut Butter Oat Muffins and substituted Barney Butter. This turned out fabulous….very moist with just the right amount of almond butter flavor. I topped my first one with strawberry preserves. Later, I topped one with a little butter and cinnamon sugar! YUM! Here is the link to the recipe with peanut butter. Almond Butter Oat Muffins

Ingredients:

* 1 1/4 cups all-purpose flour
* 3/4 cup quick-cooking oat
* 3/4 cup brown sugar, packed
* 3 teaspoons baking powder
* 1/2 teaspoon salt
* 1/4-1/2 teaspoon cinnamon
* 1 egg
* 1/4 cup almond butter
* 1 1/4 cups milk

Directions:

1. In a small mixing bowl, combine the flour, oats, brown sugar, baking powder, salt and cinnamon.
2. In another bowl, beat the egg, almond butter and milk until smooth.
3. Stir wet ingredients into the dry ingredients – just until moistened.
4. Fill paper lined muffin cups 3/4 full.
5. Bake at 375 degrees for 15-18 minutes or until a pick comes out clean.

    Just printed the recipe and I’m going to try it right now! No Barney Butter, though….I think I’ll use Peanut Butter & Co. cinnamon raisin swirl!

    I am anxiously waiting for my second shipment of Barney Butter; four jars! My son, Blain, introduced me to this wonderful product about a month ago and I absolutely love it. The chunky is so full of chunks there is barely any “butter”. I can’t wait to try this recipe…Blain’s Dad loves muffins.

    Our family loves Barney Butter! We make the cookie recipe that is on the site–amazing. Athletes love it because it is such a healthy protein and digests well. My kids and their friends are addicted (try it with chocolate chips)!
