Wrap-er-ific!

I didn’t realize until I posted my photos that I’ve eaten quite a few whole wheat wraps this evening. The wraps are the TJ’s whole wheat version, and they are super! (Before dinner, I also ate one as a snack with honey and Barney Butter spread on it.) 

I wasn’t in the mood to cook tonight, so I threw together a quick chicken salad wrap using a can of TJ’s canned chunk chicken, which is packaged just like canned tuna. It sounds weird (and perhaps a little gross), but canned chicken is actually a great way to add some extra protein to your meal. 

Chicken Salad

Makes 4 servings

  • 12.5 oz canned chunk chicken
  • 1/3 cup feta 
  • 1/3 dried cranberries
  • 1/4 cup chopped walnuts
  • 1 tbsp mayo 

I used a whole wheat wrap to eat my chicken salad, but I should have known better…

I made a mess trying to eat it! I ended up getting a fork and eating all of the stuff that fell out. 

Dessert was another wonderful wrap creation: pumpkin butter with peanut butter and chocolate chips. It doesn’t look pretty, but this was a FANTASTIC combination of sweet flavors! Just what I needed! :)

Ok, now it’s officially time to relax! Wahoo!

    it happens to me all the time! I still can’t find a good way to wrap it. Sometimes I use foil paper but I feel bad wasting a large piece of foil paper just to wrap a tortilla. Anyone has a better idea?

    Hi Tina! I posted this on Kath’s blog and thought you would have some good suggestions too. First of all, I have lost a significant amount of weight over the past six months or so. My doctor says I need to gain at least 20lbs to be at a healthy weight. Before I lost all of this weight I kind of had a “binge/closet” eating disorder. All of a sudden I took a complete turn and restricted myself from eating too much (it actually turned into eating too little). Currently I am seeing a psychologist to get myself back on track; however, I am beginning to turn into a closet eater again. I will sneak food any chance I get. I don’t know why I am doing this to myself because I feel so sick and guilty afterwards. Does anyone have any helpful tips or suggestions to get me through this? I would appreciate any help. Thanks so much!

    I love chocolate and pumpkin together, but I never though to add PB to it! Three of my favorite foods, all together in one happy bunch.

    also, michelle, maybe you should try confiding in someone you live with or a close friend so you can feel more accountable for your actions. It could also be a mind frame thing. Just try to be positive and focus on having a healthy, strong body.

    What about journaling or talking with a close friend or family member about this? It sounds like it is something that you should talk with your psychologist about. He/she will likely have some wonderful ideas to get you through. I wish you the best!

    Even though I will eat canned tuna, for some reason I just can’t do the canned chicken experience. But, your chicken salad looks delicious so I might have to give it a whirl! Happy Thursday!

    Hi Tina, sorry this might be an extremely obvious suggestion….but I think your wrap would be less messy if you roll it up like a burrito, instead of trying to eat it like a taco. And how about grilling your dessert wrap in a panini maker to make it a warmer, meltier, nighttime treat? ;p YUM!

    @Michelle – I just started coming to the realization that I need to drop a good amount of weight. Like you, I use to snack when no one was looking. Driving home from work and stopping at the drive through for a quick hold over. The best advice I can give you with that, is if you get a urge to eat something grab something nutritious. I went out and bought rice cakes just for this as a just in case.

    As for honey, I’ve always had a dislike for it. I think I associated honey with being sick. My mom use to give me tea with honey every single time that I was sick, that now in my adult life I haven’t gone near the stuff. I guess I should start out small and put a drop into cereal in am or something.
