Peanut Butter Date Cookies

Happy Sunday! Here’s a Sunday morning treat for you all…
Peanut Butter Date Cookies 

Bree, a reader of the blog and UVMer (Mal is an alum too), sent me her grandma’s recipe for Peanut Butter Date Cookies. Oh my God are these amazing!

Peanut Butter Date Cookies

1 egg, slightly beatern
1/2 c sugar
1/2 c packed brown sugar (I used 1/4 cup of Spenda brown sugar)
1 c peanut butter 
1/2 c chopped dates
Blend egg and sugar, add peanut butter, mix throughly. Stir in dates. Roll into 1 inch balls, please 2 inches apart on an ungreased cookie sheet. You can use a fork to make a criss-cross on them or use the bottom of a glass to flatten them a bit. Bake at 350 degree for 10-12 minutes. 
Mmmmm…. these cookies are so moist and peanut buttery! I love the date chunks– so chewy and sweet!
 
The recipe made almost 2 dozen cookies. Mal and I each ate a couple last night… and I had another 2 for breakfast this morning with my iced coffee! :)  
Pub Golf

Pub Golf was a blast! It was great to see everyone dressed up– some people really got into it with their golf outfits! One team wore similar polo dresses with knee-high argyle socks, and another team coordinated matching outfits: orange polo shirts with blue plaid shorts! It was awesome! 
I was well-behaved yesterday and stuck to my 4 beer limit. I had such a great time– I didn’t feel like I was missing out at all by not drinking at every bar. My team didn’t care that I decided to skip bars… Mal even ended up skipping a few drinks too. Neither of us likes getting too drunk… or the awful hangover that follows! All in all, Pub Golf was a wonderful time… and we were home before 9:00!

    I emailed Bree to make sure it was okay to post her grandma’s recipe. I didn’t want to post it without her permission. If it’s okay with her, I’ll post it as soon as possible!

    Oh my goodness gracious, Bree’s grandmother is a GENIUS for creating those Peanut-Butter-Date cookies – they look fabulous!!!! Moist, flavorful cookies are always the best :0)

    So glad that you had a blast at Pub Golf!

    Hi Everyone, I emailed Tina and told her she could post the recipe. I have also used raisins/chocolate chips/combination of both when out of dates. Enjoy!

    I am thoroughly impressed with your deciding on 4 drinks and sticking with it…its so tough when out with friends to do that! I think you are a great example of being a 20 something who goes out and has fun, but still manages a healthy lifesyle!

    Mmm peanut butter and dates sound like an awesome combination for a cookie!

    And good for you for sticking to the beer limit! That seems like I’d be a bit tough when hitting up so many different pubs.

    made these for my sister and she loved them!

    I also added a bit of cinnamon! YUM!
