Description

This sheet pan citrus salmon with roasted vegetables is a one-dish dinner that’s simple to throw together at the last minute. If you’re looking for a lighter meal that’s lower in carbs and high in protein, this is it. Gluten-free and dairy-free.


Ingredients

12 ounce salmon fillet

1 yellow or orange bell pepper

3 cups broccoli florets

1/2 red onion (large), sliced

2 Tablespoons extra virgin olive oil

1/2 cup coconut aminos (or soy sauce)

1/3 cup orange juice

1 Tablespoon minced garlic

salt and pepper to taste


Instructions

  1. Preheat oven to 375 degrees F and line a baking sheet with parchment paper.
  2. In a small bowl, whisk together coconut aminos (or soy sauce), orange juice, and garlic. Pour over salmon. Refrigerate and let marinate for 30 minutes.
  3. Place broccoli, bell pepper, and red onion on the sheet pan. Drizzle the vegetables with olive oil. Remove salmon from marinade and place on sheet pan with vegetables. Sprinkle everything with salt and pepper to taste.
  4. Place in the oven and bake for 30 minutes or until salmon is fully cooked.
  5. Divide between plates and enjoy!
