Eggnog Pancakes (Gluten-Free)

Makes 6 Pancakes


  • 1.25 cups almond flour/meal
  • 1/2 cup eggnog
  • 2 eggs
  • 1 tbsp brown sugar
  • 1 tsp cinnamon
  • 1 tsp baking powder
  • Pinch of salt


  1. Combine all ingredients in a large mixing bowl.
  2. Heat pan (or griddle) over medium heat and coat with non-stick cooking spray.
  3. Use a 1/4 cup to portion batter onto the pan/griddle.
  4. Cook each pancake for 2-3 minutes and then flip. Cook on the other side for about 1 minute.
  5. Serve with your favorite toppings.
