An easy, one-pan recipe that’s perfect for breakfast, lunch or dinner!
1 Tbsp unsweetened coconut oil
2 medium/large sweet potatoes (1.75lbs pre-cut)
1lb ground beef (can sub turkey or chicken)
1 Tbsp garlic
1/4 tsp cinnamon
1/4 tsp sea salt
4–5 handfuls of baby spinach
- Dice sweet potato into small pieces and add to pre-heated large saute pan with oil, garlic, salt & cinnamon. Coat sweet potatoes in oil & spices, cover with a lid and cook on medium for 12-15 minutes. Mixing occasionally.
- Once the sweet potatoes are semi-soft, add ground meat to the pan. Break up the meat as it cooks and toss around the sweet potatoes on occasion.
- Continue to cook the sweet potatoes and meat until it is no longer pink. Add spinach and cook until wilted. Serve & enjoy!
