I’m the owner of Carrots β€˜N’ Cake as well as a Certified Nutrition Coach and Functional Diagnostic Nutrition Practitioner (FDN-P). I use macros and functional nutrition to help women find balance within their diets while achieving their body composition goals.


An in-depth, 4-week reverse dieting course for women who feel like their metabolism has slowed down, think they might have hormonal imbalance and can’t lose weight no matter what they do.

Zucchini has taken over my life. I absolutely hate wasting food, so that huge zucchini from my realtor has ended up in salads, sandwiches, smoothies, and now baked goods over the past few days. What a versatile vegetable! πŸ˜‰


Zucchini Muffins

Makes 12


  • 1 cup whole wheat flour
  • 1 cup all-purpose flour
  • 1/4 cup ground flaxseed meal
  • 1/4 cup sugar
  • 2 cups shredded zucchini
  • 1/3 cup maple syrup
  • 1/4 cup canola oil
  • 1 egg
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • Pinch of salt
  • 1/2 cup chopped walnuts
  • 1/2 cup raisins


  • Preheat oven to 350*F.
  • Combine all ingredients in a large mixing bowl. Blend well.
  • Coat muffin tin with non-stick cooking spray.
  • Fill muffins tin 3/4 full with batter.
  • Bake for 20-25 minutes until tops are golden brown.
  • Allow to cool before serving.


These muffins taste just like fall. For some reason, they remind me of the muffins from the Ocean Breeze Cafe in Newport, Rhode Island. They’re thick and hearty, but sweet and delicious– just the way a muffin should be.



For breakfast, I paired two Zucchini Muffins with a hard-boil egg and some red grapes.


I also enjoyed some caramel-flavored iced coffee with soy milk.


I received my second round of book edits last week, so I’m spending the rest of today tackling them. I think I’m getting close to end of edits!

  1. would follow my dream to become a chef. Drop out of college in Nevada, move to New York and start all over in hopes of graduating with a culinary degree and the bachelors degree.

    I have never felt so lucky to be pursuing a dream.

  2. Muffins look great. I hate wasting food too, luckily my job has taught me a lot of how to utilize older vegetables and when we have a abundance of product. So fun. :-/

    I never thought I would become a chef! Let alone in a natural food environment. I grew up on gushers and ragu lasagna, never cooked a thing in my life. I went to school for nutrition and switched over to culinary school on a whim. Love where I’m at now, but I wish it brought in more money. Don’t we all?

    Hope your TNT is going well, I’m thinking about turning my daily runs into training as well!

    Your post about zucchini gets me excited about tonight. I’m making HEAB’s zucchini fudge for my family! πŸ™‚ Zucchini is such a versatile veggie! I ate it plain last night in a salad and it is so great to bake with. My roommate at college makes epic chocolate chip zucchini bread!

  10. I never thought I would be training for my first marathon! 3 years ago I could barely run 1/4 mile without stopping. Now, I have run 2 half marathons and I have my first marathon coming up in Philadelphia on Nov. 21. I am so excited! Good luck to you and Mal with your training.

  12. I made zucchini muffins last week and everyone loved them. It really is so versatile–a lot of veggies are, I’ve realized, one I start being more creative in the kitchen.

    I never thought I’d be able to run a mile. I couldn’t in middle or high school and felt like such a loser. Now, it’s a breeze! πŸ˜€

    YUM- those muffins look amazing… I hate vegetables, but it’s really amazing what can happen to zucchini (and carrots, for that matter) in some sort of a baked good form

  15. I never thought I’d convince my husband to be a vegetarian! or to like broccoli! or to not eat an entire box of cookies in one sitting! Ha ha! They say you can’t change a man, but I managed to help him switch to healthy habits within 2 years of our marriage. He needed it too! Hypertension runs in his family, and he was already showing signs of it in his early 20’s. After taking up racing and switching to a plant based diet, I’m happy to say he got a clean bill of health at his check-up appointment the other day! The doc wasn’t even sure why Robert was in there… if he only knew the blood pressure readings he’s had over the years!

    I never thought I’d start my own blog because I didn’t think I was ever a great writer. However, I can’t imagine my life without it and I’m having so much fun with it!

  17. ….be a runner. When I first started dating my husband he was training for his marathon. I thought it didn’t look fun at all. Now I’ve ran countless 5k’s, 2 half marathons and am training for my first marathon. πŸ™‚

  19. live in New York. I was never anyone who dreamed of living in New York, and kind of ended up here by accident. It’s not the place I want to be for the rest of my life, but it’s been an interesting place to call home for the past three years! Now that I’ve put in some time here, I feel like I could live anywhere and be OK!
