Instant Pot Lemon Artichoke Shredded Chicken

  • 3 pounds chicken breast
  • 1 cup chicken broth or water
  • 12 ounces jarred artichoke antipasto
  • 1 lemon sliced
  • salt and pepper to taste


  1. Place above ingredients in your instant pot. Season with salt and pepper. Seal cover, press the "Poultry" button, and set timer to 22 minutes. When finished, release stream and then take off cover. Remove chicken breasts from instant pot, place in a large container with cover, and then shred with a folk. Spoon extra sauce from instant pot over chicken, if desired.
