Coat a 12-cup muffin pan with cooking spray and then place one slice of ham in each cup. Cut cheddar slice into quarters, so you have 4 smaller squares. Place one cheese square in the center of each piece of ham.
Pour batter evenly among cups, about 3/4 full. You can also place cheese square ON TOP of the egg batter if you prefer a cheesy top!
Remove from oven and allow to cool slightly before serving. Store leftovers in a glass container with lid in the refrigerator for up to a week. Reheat in microwave as needed.
