I'm Tina

I’m the owner of Carrots ‘N’ Cake as well as a Certified Nutrition Coach and Functional Diagnostic Nutrition Practitioner (FDN-P). I use macros and functional nutrition to help women find balance within their diets while achieving their body composition goals.

Man, we had an awesome vacation. I want to go back!!!

I honestly can’t wait to tell you guys all about our cruise. I have lots of fun posts planned. Most of them will be “Show & Tell-ish” since I was on vacation and didn’t specifically snap photos or gather info for CNC, but if you have any questions about cruising or the places we visited, just let me know. I’ll do my best to answer them!


Last night, I received a tweet asking whether I had ever prepared the ingredients for “Oatmeal” Minus the Oats the night before breakfast to save time in the morning. I never had, so I gave it a whirl last night. I mixed up all of the ingredients (minus the ground flaxseed meal because I didn’t want it to get all gooey) in a Tupperware container and stored it in the refrigerator overnight. I didn’t have any fresh bananas on hand, so I used a frozen one, which turned out better than expected since it defrosted overnight, so it was easy to mush up while cooking in the morning. I added the ground flaxseed meal in the morning as well as a big scoop of peanut butter to a nearly-empty jar of Teddie Peanut Butter.

We didn’t have any iced coffee in the fridge, so Mal let me use his gift card to run to Starbucks to grab one. What a nice guy.

If I could be anywhere in the world right now I would be in a little cafe in Italy…it would be an outside cafe and I would be reading a book, sipping coffee and eating chocolate or a bread and stinky cheese…I think I’m going to cry I need a vacation so bad! lol BTW- you guys look RIPPED!!!! WHOAH! Nice!

    As far as where I’d be, that’s easy, Kauai. We’re going on vacation soon and we keep thinking we’re going to Kauai instead of Maui & Big Island. We’re already planning next year’s trek to Kauai we miss it so much.

  4. I would love to go to Malta…my best friend lives there and I’ve never been! I was just wondering, why you didn’t make your Oatmeal Minus the Oats actually in the peanut butter jar to save another container?

    1. I didn’t know the peanut butter jar was empty until I opened it this morning, but I also needed to cook the egg whites before I could eat it! 🙂

  5. I’d honestly like to be anywhere besides behind my desk at my computer. Somewhere where the sun is shining and friends are would be preferrable. 🙂

        I was going to ask if it was 7 mile Beach! Agh! That’s where we stayed for my honeymoon. It was so spectacular. I think I loved Hawaii more, but I think its more likely I’ll make it back to Grand Cayman since its a 3 hour flight compared to a 12 flight!

  6. i am so glad you guys had a nice vacation!!! i cant wait to hear all about it and those pictures made me SO jealous as I am in my office writing out boring old checks! if i could be anywhere in the world right now, it would be Eze in the south of france…no cars, clifside village full of history! sign me up!

  7. I’d be on Hilton Head Island with my parents, sitting on a rocking chair on the porch drinking coffee after a morning run.
    Love getting to daydream in the morning:)

  8. I’d love to be in Cayman too! My parent’s are lucky enough to own a house right on 7 mile (next door to the Ritz, swoon), and they have pretty much retired there. One day, one day. I’m just lucky for now that they ask me to come along every once and a while 😉 I would never leave that beach if I could!

  10. I’ve heard AWESOME things about Cayman. I used to work at FOOD & WINE and we did a festival there and everyone came back raving about how great it is there.

    As for where I’d be, I’m pretty much down for anything that involves fun, sun and relaxation 🙂

  12. Jeebus, Crossfit is REALLY working for you two. Both you and Mal look amazing! Rrrrripped! I’m glad you had an amazing trip — I’m headed to St. Maarten the day after I get back from RTB and cannot WAIT (though I won’t fill out a bikini as well as you do – dang!) 😉
