Man, we had an awesome vacation. I want to go back!!!

I honestly can’t wait to tell you guys all about our cruise. I have lots of fun posts planned. Most of them will be “Show & Tell-ish” since I was on vacation and didn’t specifically snap photos or gather info for CNC, but if you have any questions about cruising or the places we visited, just let me know. I’ll do my best to answer them!

Breakfast

Last night, I received a tweet asking whether I had ever prepared the ingredients for “Oatmeal” Minus the Oats the night before breakfast to save time in the morning. I never had, so I gave it a whirl last night. I mixed up all of the ingredients (minus the ground flaxseed meal because I didn’t want it to get all gooey) in a Tupperware container and stored it in the refrigerator overnight. I didn’t have any fresh bananas on hand, so I used a frozen one, which turned out better than expected since it defrosted overnight, so it was easy to mush up while cooking in the morning. I added the ground flaxseed meal in the morning as well as a big scoop of peanut butter to a nearly-empty jar of Teddie Peanut Butter.

We didn’t have any iced coffee in the fridge, so Mal let me use his gift card to run to Starbucks to grab one. What a nice guy.

  1. My favorite place to be in the world is always on a sunny beach in Playa del Carmen, MX. Ironically enough, just across the water from one of your cruise stops, Cozumel!

  2. Costa Rica! 2 years ago I did a 8 day on/off road guided motorcycle tour on an enduro (street legal dirt bike). Since that trip I have been wanting to go back and explore the sections we didn’t get to during the first trip.

    Every day we were in a different city. We traveled from Atenas all over the Pacific side then ended back in Atenas. Since we were on motorcycles, we were able to take roads (if you want to call some of them that) where most people can’t take a car. It was the true back tour of Costa Rica

    Any where in the world, I would be there, riding, zip lining, surfing in the Costa Rica surf.

    Oh to dream, for now I sit at my desk working away 🙂

  3. Crossfit is OBVIOUSLY working for you & Mal – you both look especially fabulous in that picture 🙂 I think if I could be anywhere in the world…it would be Hawaii!

  4. I’d be back in Portugal, hands down. Just came back about two weeks and I miss the amazing food, wine, nice people, fascinating history, etc.

  5. If I could be anywhere right now, it’d be the the coastal waters of San Sebastian, Spain. I’ve never seen a beach city like it! It has some of the most beautiful architecture in Europe, a fantastic tapas district, and miles of beautiful beach!
