When I was eating (and thoroughly enjoying) the Mexican Hash Egg Bake that I made for dinner last night, I said to Mal: “We need to remember this recipe.” It was so delicious and easy to make, I wanted us to make a mental note of it for future reference.

I actually take mental notes of all the really good meals we cook, but I somehow manage to forget them when it comes time to meal plan. I usually end up searching through my blog for our favorite dinners, so I decided to put them all in one post, so they’re easier to find. I hope they give you some dinner ideas, too!
