Q and I were wide awake at the crack of dawn this morning, so instead of going back to bed, I meal planned for the week. I know. I’m a freak. I should have went back to bed, but I had an itch to get everything organized for the week and just couldn’t sleep. I have a feeling I will be paying for this decision later! Haha! Anyway, here’s what I’m making this week!
Crock Pot Italian Turkey Meatballs – I heard a rumor these meatballs are incredible! Using them in meatball subs and with spaghetti squash this week.
Mal’s Chicken Ole – An oldie, but goodie! So delicious, SO EASY! And there’s a ridiculously cute puppy photo of Murphy in this post. He’s so tiny!
Green Juice – back on the juice train!
Chicken Stir Fry with brown rice
Tuna, Chickpea and Red Pepper Salad – I made this last week, and it was a big hit!

I up early and meal planning, too! This week we are having chili lime pork chops and chicken stir fry. I find my recipes and inspiration from blogs, the food network, The Chew (great recipes!), and of course Pinterest.

That meatball recipe looks delicious! We are doing asian style pork meatballs for dinner one night over here. Nothing like a good meatball.

I finished my menu plan on Friday. We’re transitioning into no processed foods in the house. I find recipes from blogs and Pinterest mainly and sometimes food shows on Food Network.

I’m making homemade chipotle chicken bowls this week. Super easy just toss everything in the crockpot then assemble. Also, grilled veggie pizzas. Those meatballs look yum! I need to try that. Most of my recipes I come up with myself or find them in Eating Well mag.
my method for finding recipes is seeing what’s leftover in my fridge, and then googling recipes that have all of those ingredients. i also love allrecipes — you can just plug in what ingredients you want/don’t want and find something! great way to avoid wasting food.
I always look to Pinterest and Food Gawker for recipe inspiration and then pin everything to my “weekly dinner” board. Every weekend I look to my board to see what I’ve pinned in the past. This week:
-Texas chili beans with brown rice
-Italian herb shrimp with cheesy polenta
-Chicken Enchiladas (using the enchilada kit makes this meal a cinch!)
-left over chili OR stuffed chicken breasts with sweet potato tots
-Friday take – out
AND those Fried Egg BLT’s may make the meal list next week, those look amazing! They will be even more amazing once our tomatoes come in…heaven!

I made a pot of cauliflower chowder (damn delicious blog) yesterday to eat on this week. When I get home from work this afternoon and if I am not too pooped I am going to try a cream of zucchini soup (skinny taste). It is going to be a very long work week – boss on vacation and that just leaves me and the other guy in our department to run things 24/7…so that means a full week of 12 – 13 1/2 hour days depending on the day. Mondays and Fridays are the extra long days. I get my recipes mostly from blogs. That fried egg blt is really appealing to me right now.

I always try to meal plan, but my boyfriend and I work crazy schedules so nothing ever goes as planned. I try to take ideas from other bloggers and pinterest.
Those meatballs looks so easy and delicious, and can easily be made gluten-free (for those who want to) which I love!
This week I’m on vacay in a big house and it’s super hot! I’m planning to make lots of green smoothies with Vega One/Greens/Coconut Oil/Date (so freaking good), and Spaghetti Squash with Raw Tomato Sauce. I love looking forward to eating π
Yours meals look beyond incredible. I think it’s awesome that you took the time to meal plan – after having kids sometimes it’s just best to get things done when the mood arises even if it’s 5am! I’m at the point where I can usually dream up new recipes but if I need inspiration I don’t usually have to look further than instagram. Also, I have a ton of old cookbooks from my pre-paleo days and sometimes try to recreate those recipes to make them paleo.
Sweet potato / coconut fritters and spaghetti squash ole ( with black beans corn relish and fresh salsa ) I always think of you when I make the fritters !
I love meal prepping early on Sunday mornings. I usually do mine and let my husband sleep in while I catch up on my DVR and plan. π
I use Pinterest for my recipes- I pin them to different categories like Weeknight Dinners or Breakfast so I can find them!

I meal plan on Sundays, too, although I’m losing my motivation for cooking and planning these days… everything tastes better when someone else makes it! The meatballs do sound incredible, and I could eat an egg sandwich every night right now and be happy!

This week we already made 4 portions of vegatables gratin; just put all veggies we had in a baking dish (cabbage both green and red, cauliflower, leek and fennel) and mixed 2 eggs, creme fraiche and cream to put on the veggies. Topped with tomatoes and cheese.
Tonight we’re making fish in the oven topped with creme fraiche, dijon, parsley, tomates and served with rice.

I have such a hard time finding new recipes. I really love skinnytaste and chowstalker is good for paleo recipes. My husband and i aren’t picky; I love cooking and trying new recipes, it’s the kids that throw me for a loop. So often I make something I think they will love and they won’t touch it. I recently started making a list of go-to recipes that everyone likes so make meal planning easier.
My meal plan this week isnt the greatest this week because Im trying to use up all my food so I can freezer cook! π Meals this week: Meatloaf, chicken and stuffing bake, leftovers, chicken enchiladas and whatever else I can forge for lol

I found kelp noodles! So for the first time I’m going to be making a kelp noodle salad/slaw and I’m pretty excited about that π
The Bistro Salad! My biggest MEH about it at TJ’s is how bitter the kale is because it’s not “chiffonaded” (massaged) and the dressing. This is genius. I made homemade granola bars yesterday to munch on throughout the week… and your banana chocolate chip oatmeal cookies are a major hit around here. I’m pretty sure we have a weekly stash (and a frozen one). My BF and all of our friends are obsessed.
