I’m the owner of Carrots ‘N’ Cake as well as a Certified Nutrition Coach and Functional Diagnostic Nutrition Practitioner (FDN-P). I use macros and functional nutrition to help women find balance within their diets while achieving their body composition goals.


An in-depth, 4-week reverse dieting course for women who feel like their metabolism has slowed down, think they might have hormonal imbalance and can’t lose weight no matter what they do.

Good morning and HAPPY MONDAY to you! How was your weekend?

We had a really nice weekend over here. Once again, it flew by (holy cow), but only because we had such a great time and you know how it goes: Time flies when you’re having fun! Ha! Anyway, here’s a little recap from our weekend!

Friday afternoon: Quinn, Murphy, and I joined my friend Jess along with her nephew and dog for an afternoon walk. It was a beautiful day, so we walked and talked and enjoyed the fresh Fall air and scenery.

Friday night: We had friends over for dinner and drinks. We tried a new local place called Wild Ginger and it was pretty darn tasty!

Saturday: Saturday was all about my mom’s 60th birthday celebration. I can’t wait to tell you guys all about it! I’ll have a full recap tomorrow.

Sunday morning: It was my turn to sleep late, so Mal and Quinn made me blueberry pancakes and bacon for breakfast. They’re the best.

Mal, of course, used his recipe for amazing cake-like pancakes. Mmm!

Sunday afternoon: I joined my friend Marisa for a 10-mile run, which required a long-sleeve shirt, leggings, and GLOVES. I am so not ready for winter!

PSA: The apple cinnamon Oh My Yog is epic. Epic, people. It reminds me of apple crisp with ice cream on top. YOU MUST TRY IT. Quinn loved it too!

We bought a new rug for the living room. Everyone loved it, so we celebrated appropriately: Dance party!

Since it’s the start of a new week, I wanted to set some goals for myself to keep me motivated and accountable. Here’s what I want to accomplish this week (some of them are health-related, some are just life/errands/random stuff I’d like to get done).

Drink at least 32 ounces of water per day – Drinking water used to be one of my best healthy habits, but I’ve seriously slacked in recent months.

Make some nutritious meals – Last week, I didn’t have time to do my usual Sunday prep, so we totally winged it, which meant we didn’t eat as healthy as we normally do.

Attend at least 2 CrossFit classes – I signed up for an unlimited month membership at CrossFit South Shore at the end of September, but I’ve only made it to a whopping 4 classes so far. I really need to get my butt there more often.

Make a tofu breakfast scramble – My friend Jess told me about a delicious breakfast that she makes with scrambled tofu, nutritional yeast, and veggies, and it sounds so good. I’m dying to try it and expand my usual breakfast repertoire.

Buy tights for Quinn’s Halloween costume – We bought him an insanely adorable bald eagle costume that totally needs yellow/orange tights to go with it. We’re actually going to a Halloween event called “Zoo Howl” at the Franklin Park Zoo on Sunday, so I need to make sure I get them this week.

  1. Such a cute costume! Might I suggest trying to find stretchy pants instead of tights incase it is cold? I can remember many costumes growing up that required stretchy pants underneath (and a coat, and hat, and gloves… Oh, northern weather)

  2. My goal is to keep up with my morning workouts. I set the goal two weeks ago and am pushing to stay consistent until it becomes a habit!
    We attended our zoo’s Halloween event and it was a blast! I loved all of the kids in their costumes.

  3. I definitely need to increase the water intake too! After being in a wedding this weekend, I am seriously dehydrated. And my main goal is to get outside! It is way too beautiful out to be inside. It is my goal to be outside everyday, even if it is just for a 30 minute walk!

  4. Ahh I just love how goal-oriented you are. It always inspires me to set some too and it’s such a great frame of mind to be in. I’m gonna make my big one to prioritize sleep despite being in midterms and always being so tempted to stay up late. P.s. Still haven’t tried those pancakes and I am kicking myself for it ha. They truly look like heaven on a plate.

    Those are great goals. My big goal is to finally finish proofreading my book and send it to the publishers – mental health and career goals are getting priority for me right now 🙂

    Yesterday Mr. Science and I cheered the mother dear on while she ran in a 1/2 marathon. OMG it was cold just standing there! I am definitely bundling up this week in an effort to enjoy the colder weather a little more…

  6. Goal this week is to eat 80% paleo. I started it off with this mornings breakfast. I made your recipe for French Toast scramble but I added a scoop of pumpkin puree to it. SO GOOD!

  7. Gorgeous pictures! I love fall and it’s the perfect weather lately. I wish it would stay this way for a while and not get colder…

    My goal for the week is to get back to running! I took the week off after my half marathon, so I want to get in a few runs and swims this week.

  8. My goal is to fit in 2 more CrossFit classes this week. I go at 5:30AM which is definitely a challenge but it has definitely become a habit/addiction!

    Where did you take your Friday walk? That raised walkway looks so cool!

  9. I want to get in a couple of workouts and get organized at home this week. Probably hot yoga once or twice, an interval class at the gym, and some weights- I need to get those in!

    Tofu scrambles are surprisingly good (coming from an egg lover). Add turmeric, S+P, garlic powder, and mushrooms, top with avocado- really good!

    We saw a few snowflakes yesterday in CT and I was NOT ready for that!

  10. To workout at least 5 times this week. And make those workouts count.

    To not put myself down. Harder than it sounds!

  11. At least 32oz? This is just nuts because if I don’t drink at least 128oz (gallon) then I feel like a major cotton-mouth. When I was pregnant it was worse and I had to drink more… I hated it. I always thought others were weird, but now I think it’s me? haha. Perhaps it’s because I literally drink nothing else (not pop, coffee) unless I have a beer once a moon.
    But really, when you work out so much and take walks, etc don’t you feel like you CRAVE water? Gosh I’m such a minority 🙂

    1. I definitely drink more when I work out. I also drink iced coffee and tea, so I guess it all adds up. I just know I’m slacking in the water department. I’m already at 64 ounces today! (I ran 5 miles.)

    2. @Stacey: I thought the same thing! I think I drink 32 oz by 8 or 9 am! My mom always tells me she thinks I may drink too much water, and this made me think mayyybe she’s right! 😀

  12. Looks like a blast with your cute little family! Love the goal setting…I am completing my Dietetic Internship right now and have very long days + long commutes. My goal for this week is to get 22 miles in. I can break it up however I would like as long as I get it done!

  13. My goal this week is to get in at least 2 workouts.
    I find lately with a puppy added into my menagerie and my hubby works 9 days away with 5 at home, that the days he is away I don’t work out. I just seem to be busy with so much up until 7 at night, then I just don’t want to go work out, I just want to drop into bed and watch a sitcom.

    excuses…I’m good at that!
    Time to see if I can start changing that.

    1. Is working out in the morning an option for you? Sometimes, it’s easier not to make excuses first thing in the morning! And I’m totally like you. I just want to relax at night.

  14. 2 of my goals this week are 1. Clean my house. 1 room each day. It has been neglected for too long. 2. Get back to counting my weight watchers points. I was in a wedding this weekend and counting points went out the door!

  15. We have a Halloween event in Knoxville called Boo at the Zoo and it’s always the cutest thing! We took Matilda last year! Good luck on your tights search!
    One of my goals for this week is to get to bed by 10 every night. I am the worst sleep self sabotager!

  16. Nice goals! It just started getting cold here in Boise so I need to make sure I drink lots of water even though it’s chilly. Plus I need to make a new workout schedule. I had no motivation this weekend and need to fix that ASAP!

  17. Okay I can’t lie, I’m so excited you are making some vegetarian meals 🙂 I love tofu scramble! Here are my two faves:


    I hate mushrooms so I just sub out whatever veg I have on hand.

    This one is so simple and I actually made it yesterday:

    I block of tofu crumbled
    1 tbsp of Dijon
    3 tbsp of nutritional yeast
    1 tsp garlic powder
    1 tsp onion powder
    I tsp cumin
    1/2 tsp of turmeric
    Salt and pepper to taste

    Mix it all up and cook in a skillet until warm and desired doneness is achieved


  18. I have been making a couscous goal to drink more water too! One of my goals is to eat nutritiously this weekend as I am traveling, and try not to stress my body out too much!

  19. Tina- where did you find yellow or orange tights?? My lil one is being a duck and he needs yellow tights (6months old) and I can’t find them anywhere!

  20. My goal is keeping up my outdoor running despite the chilly temps, I’ve got another half coming up on November 8th.

    I spy a Konditor Meister cake…hope your mom had a happy birthday!

  21. I love your goals for the week – good luck! One goal is to focus less on dessert. Trying to tame my sweet tooth…. everlasting struggle!
