For lunch today, I rocked the leftovers in our refrigerator: Baked Penne With Spinach and Sun-Dried Tomatoes with a Corn Fritter, which I later slathered in warm maple syrup. I swear, that’s the only way to eat them! πŸ˜‰


No food goes to waste in my house! I’m the Leftover Queen! πŸ˜‰


While I was eating my lunch, the door bell rang. Of course, Murphy bugged-out and raced me to the front door. (He hates being out of the loop.) A nice, elderly man handed me a huge Edible Arrangement. For me?!? The nice folks from SOYJOY sent me a beautiful fruit arrangement, which instantly put a smile on my face and made me feel warm and fuzzy again! :mrgreen:

I’m not going to lie, today has totally turned around since this morning’s blog drama. (My blog crashed for the zillionth time. :-?)

Just now, I made myself a piece of whole wheat toast with Barney Butter and flaxseeds sprinkled on top. I love the added crunch!


I’m taking Murphy for his long walk of the day (and counting it as my workout), so I figured a snack would help fuel me through. I’m planning at least an hour walk withΒ Turd around the neighborhood.

  1. What a nice suprise!! I like to say that I don’t like cut flowers, but everytime I get some it makes me smile. And if the arrangement was made of fruit, I’d be super excited!!

    I love leftovers too! The only thing is… my husband is a bottomless pit and we hardly ever have any. I usually make a meal that would feed 4 and it’s enough for him and me!? He’s got a crazy metabolism… SO jealous.

  2. Well maple syrup is amazing with cornbread, so why noe with corn fritters! I think I’ll have to copy your snack today, albeit with cookie dough peanut butter by PL loco and ground flax πŸ™‚

    I am the same way as you with leftovers. I will eat them forever and I hate throwing away food.

    I’m glad your bake sale went so well that is really a phenomenal feat.

  4. I love Edible Arrangement baskets! just so you know, for your body to absorb the Omega 3s in flax, the seeds need to be ground up. I don’t know why they sell them whole if we should eat them ground!
