Holy goodness, my quads are on fire this morning! I did a really tough lower body workout at CrossFit yesterday, and, boy, am I feeling it today. Yowsahs.

My quads are sore just thinking about it!

I worked with Kerrie on the Strength part of the workout. We did 3 warm-up sets and then did 5 sets of 5 reps at 140 pounds, so my legs were exhausted even before we started the WOD.

I used the prescribed weight for the Overhead Squats (45 pounds) and box for the Box Jump Overs (20 inches). I set up right near Kerrie and tried to keep up with her, but she smoked me. I finished 5 + 6 (5 rounds + 6 reps), and my legs were donezo.

After CrossFit, I came home and took Murphy for his second walk of the morning. When I took him out for his usual morning walk, he was not at all interested in doing his “business.” He was taking his sweet time””sniffing things, scavenging for food (it was trash day), and not focusing on going “potty,” so I took him back in the house and went to CrossFit. I actually grabbed an iced coffee to take with me on our second walk because I had a feeling Murphy was going to dillydally again””and he did. He’s soooo stubborn when he wants to be. It’s Murphy’s world; I’m just living in it.


A little while later, I made lunch, which was a ham and provolone wrap with lettuce and tomato.

On the side, I had some fresh fruit, which was leftover from my sister’s shower.

I spent the rest of the afternoon tackling my inbox, which, I’ve determined, is a scary place. I can’t keep up with it””even with all sorts of labels and folders. It’s a mess.


I eventually took a little break to make some juice. You’d think I’d be sick of drinking juice after a 3-day cleanse, but it actually made me like it more. I tried to recreate Citrus 2, but I didn’t get it quite right””I think I need more pineapple. I’m going to try it again today, and I’ll be sure to let you know how it turns out. I need this juice in my life!

I was excited when dinnertime rolled around because I had a delicious recipe in mind for Vegetarian Cottage Pie. When we were in Ireland, I saw a similar dish on a menu at a pub and immediately knew that I wanted to recreate it at home. I threw together this Vegetarian Cottage Pie last night, and it turned out so well. This recipe is definitely a keeper!

Vegetarian Cottage Pie


  • 3 large potatoes, cooked (I used 2 Russet + 1 sweet potato)
  • 1 medium onion, chopped
  • 3 carrots, chopped
  • 3 stalks of celery, chopped
  • 1 15-ounce can of chickpeas, drained and rinsed
  • 1 tbsp olive oil
  • 1/2 cup vegetable broth
  • 1/4 cup milk
  • 2 tbsp butter
  • 1/2 tsp sea salt
  • Pepper to taste
  • 1/2 tsp dried thyme
  • 2 tbsp vegan Worcestershire sauce
  • 1/2 cup shredded cheddar cheese


Preheat oven to 450 degrees F.

In a large pan, sauté onion in olive oil until it’s soft. Add carrots and vegetable broth, cover, and simmer for 5 minutes. Then, add celery, cover, and simmer for another 5 minutes. Remove pan from heat and mix in chickpeas.

Vegetarian Cottage Pie

Add veggie-chickpea mixture to an oven-safe dish.


In a food processor (or blender), combine cooked potatoes with milk, butter, salt, pepper, thyme, and Worcestershire sauce until smooth. Spread potatoes on top of veggie-chickpea mixture and then sprinkle with shredded cheddar.

Bake for 20 minutes or until the cheese starts to brown.


Remove from oven and serve immediately.

Comfort food = YUM! I went back for a second serving of this stuff. It was so good!

Recipe makes 4-6 servings.

  1. i make a fake meat sauce for pasta with soy crumbs (usually morning star farms) then green and red pepper, onion, spices and some tomato sauce or crushed tomato. first spray the pot or add olive oil, cook onion until soft, then add peppers, oregano, garlic, pepper and salt. Cook then add tomatoes and soy crumbs. Add pasta or pour over pasta/rice and serve with parmesan cheese. You could also add basil. a one pot easy meal.

  2. I’ve worked my way down to just about 1-2 meals with meat every two weeks (usually when i got home to eat dinner with my family, as I don’t cook it for myself). I’m slowly weaning my way off other animal products, but it is a process as it is expensive and I’m on a student budget!

  3. This looks great! Usually when you see vegetarian cottage pie or shepherd’s pie recipes they use mushrooms as the substitute and I’m not a fan of mushrooms – so this is a great alternative I never thought of! Thanks 🙂

  4. I consider myself a “flexitarian,” eating meat once every week or two. I do still eat dairy & fish all the time.

    My favorite part of this post was about Murphy’s walk (or lack thereof); I have a beagle and EVERY walk with her is like that. Good to hear other doggies do that too. 🙂

  5. Yum that vegetarian cottage pie looks amazing! I always end up making spaghetti squash or stuffed peppers with veggies as vegetarian dishes. I never buy meat because I live on my own, and never finish it before it goes bad so I’ve become an accidental vegetarian besides my occasional sushi fix!

  6. I usually only eat meat two or three times a week in the form of tuna or chicken. I haven’t tried to make a lot of vegetarian meals because I’m not a huge bean fan, but this looks great. I bet the mix of regular and sweet potatoes makes the dish. I don’t think I could ever go vegan because I do like things like eggs and milks almost every day throughout the week.
