I'm Tina

I’m the owner of Carrots ‘N’ Cake as well as a Certified Nutrition Coach and Functional Diagnostic Nutrition Practitioner (FDN-P). I use macros and functional nutrition to help women find balance within their diets while achieving their body composition goals.


An in-depth, 4-week reverse dieting course for women who feel like their metabolism has slowed down, think they might have hormonal imbalance and can’t lose weight no matter what they do.

Break out the champagne! It’s time to celebrate! :mrgreen:

This morning, Mal and I joined my sister, her husband, and my mom for a celebratory brunch at my sister’s house.


We had a lot to celebrate today, including my mom’s 55th birthday (which is tomorrow), my sister and her husband’s first wedding anniversary (which is today), and Mal and my new house (details tomorrow).


While we sipped our mimosas and enjoyed some coffee, the ladies put together brunch.


Meanwhile, the guys organized their Fantasy Football line-ups.

My sister whipped up some scrambled eggs.


I made a Hash Brown Casserole.


And my mom prepared a fresh fruit platter.


Brunch was excellent!!! :mrgreen:

I must say, the Hash Brown Casserole, in particular, was a big hit. Everyone ate multiple servings and we practically licked the baking dish clean! 😀


While we ate, Batman and Murphy relaxed.


And chewed.


After brunch, we took some family photos.




A little while later, it was time to enjoy a special treat. When my mom, sister, and I hang out, there’s always dessert! 😉


My sister baked a batch of delicious Halloween-inspired cupcakes. Yay! 😀


I ate two cupcake tops with a scoop of pumpkin ice cream. Holy yum! The Edy’s pumpkin ice cream tastes just like pumpkin pie. It was quite the special treat!


Then, my mom opened her birthday gifts and Mal and I showed everyone photos of our new house. Before long, the pups lost steam and passed out from playing so much.



I can’t believe Sunday has flown by so quickly. Where did the day go!?! I need to start thinking about what to make for dinner soon.

  1. I tried that Pumpkin Ice Cream last year, but it weirded me out that it tasted so much like pumpkin pie! I had trouble finishing the carton (I mean, as much trouble as I can have eating ice cream).

  2. Looks like a fun celebration! Homefries/Hashbrowns are my favorite so I bet I would love that dish too. Can’t wait to hear more about the new house!

  4. Ohhh my goodness, the Edy’s pumpkin pie ice cream was my downfall last year! I am pretty sure that we ate 6 or more containers over the course of the time it was available…it totally does taste like pumpkin pie! I usually add chocolate chips to my bowl as well…

  7. Edy’s Pumpkin Ice Cream is fabulous. The odd thing is that the regular has 3 gms fat/serving, and the low-fat version has 3 gms fat/serving. Edy’s is better than Cold Stone Creamery’s Pumpkin Ice Cream — I think CSC’s should be sweeter!

  8. ooops…I meant to write that the regular has 3.5 gms fat/serving, and the low-fat version has 3 gms fat/serving. Hardly any differenc!
