Thankful Friday

Good morning! Happy Friday! I’m at the doctor’s office right now for some tests, including a rather uncomfortable flexible sigmoidoscopy, so, needless to say, my morning isn’t off to the best start. OMG. Pancakes!

Oh, boy, do I have a delicious pancake recipe for you guys! Ingredients: 3 bananas 3 eggs 1/4 cup almond butter 1/4 cup almond meal/flour 1/2 tsp baking powder 1/2 tsp vanilla extract Directions: Mash bananas. (I like the mash-in-peel method the best. It works great with unripe bananas.)

Hooray! I survived the Rock ”˜N’ Roll USA Half Marathon! After a colitis flare and running just 15 miles in the past month, I am absolutely thrilled to have crossed the finish line- with a smile on my face, no less!

  1. I too can’t believe that it’s almost April. This year has gone by so quickly so far. Only a little over a month until I graduate from college! Thanks for posting this- I missed a few of the posts and I’m looking forward to reading them.

  2. Really want to try these paleo-style breakfasts! The oats minus oats and OMG pancakes look delicious, but I’m still wondering how you can make something taste like carbs witout really adding carbs? Crazy but worth a shot I guess. Do you use egg whites from eggs, or egg whites from a carton? I’m always unsure which is healthier, and which is cheaper per oz. You’d probably be an expert on that topic…

  3. Hi! I’m a new follower, found you on Pinterest! I made the sweet potato wedges yesterday, I’d been dying to try them with PB! I found I liked plain greek yogurt for dipping much better! This morning, my daughter helped me make your OMG pancakes and they were sooo good! Thanks for the yummy recipes!
