Ok, so today’s lunch looks grosser than it actually tastes. I swear, it’s tasty– especially when served cold! 😀
Last night, I made a Tofu Pizza Pie (recipe below). I combined tofu, zucchini, flour, and Parmesan cheese to make a pizza “crust” of sorts. The crust wasn’t firm like a typical pizza. It was soft like tofu, but not totally mushy. I topped the tofu crust with marinara, shredded cheese, and green pepper slices just like I would add to a regular pizza.
The end result looked ugly, but it tasted oh-so-delicious! Chilling the Tofu Pizza Pie overnight turned it into a soft, cold pizza! Mmmm! So delicious!
Lunch also included one of Angela’s wonderful Glo Bars. Love these! 😀
And I packed some dried apricots for an afternoon snack. I’ll probably pop into Starbucks for an iced coffee later on too. My cousin just started working at my favorite ‘Bucks location, so I want to say ‘hi’ and welcome her to the neighborhood! 😉
I’m meeting friends for dinner and drinks after work at a new restaurant in the area. I’m really looking forward to it!

Tofu Pizza Pie
Ingredients:
- 12 ounces firm tofu
- 1/2 cup all-purpose flour
- 1/2 cup Parmesan cheese
- 1 tsp baking powder
- 1/2 tsp salt
- 1 tsp olive oil
- 2 cups of sliced zucchini
- Your choice of pizza toppings
Directions:
- Preheat oven to 350*F
- Combine all ingredients in a food process or blender
- Pour mixture into a greased pan and bake for 35-40 minutes
- Remove from oven and top with your favorite pizza ingredients
- Return to oven and bake for another 15 minutes
- Allow to cool before serving
