Tofu Pizza Pie

Mastermind Weekend 1/16

Hey there!

I'm Tina

I’m the owner of Carrots β€˜N’ Cake as well as a Certified Nutrition Coach and Functional Diagnostic Nutrition Practitioner (FDN-P). I use macros and functional nutrition to help women find balance within their diets while achieving their body composition goals.

An in-depth, 4-week reverse dieting course for women who feel like their metabolism has slowed down, think they might have hormonal imbalance and can’t lose weight no matter what they do.

Ok, so today’s lunch looks grosser than it actually tastes. I swear, it’s tasty– especially when served cold! πŸ˜€

Last night, I made a Tofu Pizza Pie (recipe below). I combined tofu, zucchini, flour, and Parmesan cheese to make a pizza “crust” of sorts. The crust wasn’t firm like a typical pizza. It was soft like tofu, but not totally mushy. I topped the tofu crust with marinara, shredded cheese, and green pepper slices just like I would add to a regular pizza.

The end result looked ugly, but it tasted oh-so-delicious! Chilling the Tofu Pizza Pie overnight turned it into a soft, cold pizza! Mmmm! So delicious!

IMG_6025Lunch also included one of Angela’s wonderful Glo Bars. Love these! πŸ˜€ IMG_6034

And I packed some dried apricots for an afternoon snack. I’ll probably pop into Starbucks for an iced coffee later on too. My cousin just started working at my favorite ‘Bucks location, so I want to say ‘hi’ and welcome her to the neighborhood! πŸ˜‰

I’m meeting friends for dinner and drinks after work at a new restaurant in the area. I’m really looking forward to it!

See ya later! Happy Hump Day! 😎
