Last Saturday night, Mal and I started planning our trip to Ireland in April. The deal we booked through the Aer Lingus Vacation Store is partly planned for us with a few details that we need to take care of on our own. The package includes three nights at hotels in Dublin and Galway, which are already reserved for us. For the remaining three nights, we are responsible for booking overnight stays at our choice of independently-owned bed & breakfasts around the country. (The vacation deal includes vouchers for each of the B&B stays.) We wanted to nail down the B&B stuff just so we have a general idea where our travels will take us, so we spent a few hours on Saturday night looking at maps of Ireland and planning our tentative road trip. A rental car is included with the vacation package, so we’ll be driving around Ireland (starting and finishing in Dublin), exploring the countryside, and staying at B&Bs along the way. Obviously, we are psyched!
After quite a bit of research, Mal and I decided to stay at B&Bs in Kilkenny and Kerry (Dingle and Kenmare). We have an idea where we’d like to visit and what we’d like to do, but I’d love to hear from those of you, who have visited Ireland. What should we do and see?
Lunch
After eating my post-WOD snack, I reheated some Garlic Mustard Drumsticks and made a batch of kale chips for lunch.
I finished off lunch with some grapes.

And a few hours later, I ate a banana.
Dinner
For dinner, I cooked up some frozen veggies (broccoli, cauliflower, and carrots) and piece of haddock, which I topped pesto. Fab meal.
