To Ireland We Go

Mastermind Weekend 1/16

Hey there!

I'm Tina

I’m the owner of Carrots ‘N’ Cake as well as a Certified Nutrition Coach and Functional Diagnostic Nutrition Practitioner (FDN-P). I use macros and functional nutrition to help women find balance within their diets while achieving their body composition goals.

An in-depth, 4-week reverse dieting course for women who feel like their metabolism has slowed down, think they might have hormonal imbalance and can’t lose weight no matter what they do.

Last Saturday night, Mal and I started planning our trip to Ireland in April. The deal we booked through the Aer Lingus Vacation Store is partly planned for us with a few details that we need to take care of on our own. The package includes three nights at hotels in Dublin and Galway, which are already reserved for us. For the remaining three nights, we are responsible for booking overnight stays at our choice of independently-owned bed & breakfasts around the country. (The vacation deal includes vouchers for each of the B&B stays.) We wanted to nail down the B&B stuff just so we have a general idea where our travels will take us, so we spent a few hours on Saturday night looking at maps of Ireland and planning our tentative road trip. A rental car is included with the vacation package, so we’ll be driving around Ireland (starting and finishing in Dublin), exploring the countryside, and staying at B&Bs along the way. Obviously, we are psyched!

After quite a bit of research, Mal and I decided to stay at B&Bs in Kilkenny and Kerry (Dingle and Kenmare). We have an idea where we’d like to visit and what we’d like to do, but I’d love to hear from those of you, who have visited Ireland. What should we do and see?

After eating my post-WOD snack, I reheated some Garlic Mustard Drumsticks and made a batch of kale chips for lunch.

I finished off lunch with some grapes.

And a few hours later, I ate a banana.

For dinner, I cooked up some frozen veggies (broccoli, cauliflower, and carrots) and piece of haddock, which I topped pesto. Fab meal.

Question of the Day

Have you ever been to Ireland? If so, what should we do and see?

  1. Hi Tina,

I’ve lived in Dublin all my life so I really hope you enjoy your time here! If you’re looking for something fun and non-traditional to do on the tourist trail, look into the Viking Splash tour. I brought some American friends on it a few years ago and we had such fun!

Also, Kilmanham Gaol is really interesting and well worth a visit (it’s a short cab ride from the Guinness Storehouse 😉

I visited Dingle for the first time ever a few months ago and instantly fell in love with the place. We went out in a boat and spent the morning fishing (also a first for me!) and once we were back on dry land, went to a local pub where they cooked our fish for us and served it with fries and a salad for lunch. It was such a fab day. I’d highly recommend it. If you’re interested I’ll try to get the details as a friend organised the trip.

If you need to know anything else or are looking for some tips and advise just message me! (I assume you can see my email address somewhere?)

    Cathy x

  2. I’m so jealous!! I have only been to Ireland once and it was during a deployment and it was a very brief stop…would like to go again sometime!
