If you follow me on Instagram, you might have seen my post yesterday featuring some seriously delicious-looking Oatmeal Raisin Protein Cookies. I whipped up a batch yesterday afternoon and couldn’t wait to share the recipe! These cookies are soft, thick, and chewy with a boost of protein for some added staying power. They’re great as a pre- or post-workout snack as well as a sweet treat in the evening after dinner. They are an incredible cookie, and I hope you love them as much as I do!

Thick and Chewy Oatmeal Raisin Protein Cookies


  • 1 cup rolled oats
  • 1/2 cup FlapJacked Protein Pancake Mix (buttermilk flavor)
  • 1/4 cup packed brown sugar
  • 1/4 cup melted coconut oil
  • 2 tbsp honey
  • 1 egg
  • 1/2 tsp vanilla extract
  • 1/2 cup raisins


  1. Preheat oven to 350 degrees F.
  2. Combine ingredients in a large mixing bowl and blend well.
  3. Coat a baking sheeting with non-stick cooking spray.
  4. Roll batter into large 1-inch balls and place them on the prepared baking sheet.
  5. Bake for 12-14 minutes or until edges are slightly brown.
  6. Take cookies out of the oven and allow them to cool slightly before removing them from the baking sheet.


Makes 1 dozen cookies



  1. What’s a good sub for the FlapJacked mix? I love me some FlapJacked mix but refrain from buying it too often because it disappears too fast. ;P Protein powder?

  2. I finally ordered some flap jacked after contemplating it for a while after seeing this recipe. It arrived 1o minutes ago… I immediately pulled up this recipe and went looking for the ingredients in my cabinets. And oh the horror… I am out of oatmeal!! How does this happen?! I am going to make a 2nd trip to the store today because I must make these!!! I did try the French Toast cookie/cake with the butterscotch chips. It was life changing. Can’t believe I waited so long to try that stuff!!

  4. I actually tried them twice. I’m hooked. I prefer the second go round. I switched up Kodiac brand protein cakes mix and quick oats for rolled oats. I used 2 eggs now mstead of only 1. Added 1 teaspoon cinnamon and 1/4 teaspoon nutmeg. They are so yummy and just think no trans fats or white sugar. Something super easy to whip up and only makes 12 so we cannot eat too many but we do get just enough…maybe.
