Spring isn’t the word that I was going for”¦
I’m sure you probably know what S word I’m referring to– enough with the snow already! 👿
I went into NuVal for a few hours this afternoon. I typically work from home, so it was nice to interact with someone other than my dog. Although, Murphy is really great company. He’s Carrots ‘N’ Cake’s first employee! 😉 Murphy’s new favorite spot while I work is on my chair behind me, which is much more comfortable than on my lap!
Lunch
For lunch, I packed leftover Fig Pizza and Stonyfield yogurt with fresh blueberries and raspberries mixed in.
Snack
When I got home, I immediately broke into a batch of Salt & Vinegar Chickpeas. I probably ate about half of the container. I was starving and they are the best snack ever.
I used the soaking method to make these chickpeas, which is definitely more cost-effective, but much more work than the canned variety. Once this bag is gone, I’ll probably stick to the canned variety.
A little while later, I finished off a bag of Goji Ginger Walnut Cookies.
I first opened the bag on Saturday night, but still”¦ I can’t believe I ate all of them in less than 48 hours! I couldn’t help myself! They’re wicked good!

Gah! I have a whole bag of dried chickpeas that I bought specific to make your S&V version, but I keep forgetting to soak them!
those goji cookies are so good – i don’t even like goji berries but i don’t mind them in cookie form!!!
I am not going to say how the weather is here. Let’s just say I stepped out of work at 5P for the first time ever since I went into work and thought “Wow, this is what I’ve been missing all day? I should have gone outside!”
I need to have those chickpeas in my life.
I too am so sick of the snow. When I looked at today’s forecast yesterday morning I was pretty much indignant with my “No. No it isn’t allowed to snow anymore!” But alas, it snowed today 🙁

Those chickpeas sound so good right now! I need to make roasted chickpeas again asap.

I am so ready for spring to be here! We are forecasted to get a winter storm tonight, and I am hoping the weatherman is wrong!
Ughh I totally feel you on the dreaded Snow! I live in the Boston area too, and yesterday afternoon I ran in SHORTS! Today I walked to class in rubber boots and a big ole’ puffy coat!

I always tell myself I will soak and cook my own beans (especially with my digestive issues) but I always seem to find myself buying the canned variety instead. I feel a little less guilty because I go for the organic, BPA-free variety 🙂

I just saw snow fall for the first time today! It was tripping me out… it only lasted about 10 minutes, but it was SO weird to see!!
i couldn’t stop laughing when i read your paragraph about, “it was nice to interact with someone other than my dog.” lol! I know what you mean… i don’t even have a dog and i feel alone at times blogging and doing things at home. i seriously need to get one, he’s so adorable.

And BOO to the snow. We have a white blanket here as well, with more expected on Thursday. At least with the sun and warmer temperatures, it shouldn’t last too, too long. Bring on that spring weather!
Ugh I totally agree about the snow… I’m living in Amsterdam right now where finally I am seeing the right kind of “S” word… Spring! 🙂 And SUNSHINE! Hope it makes its way to your part of the world soon. I’m a new follower of CnC and I love it, thanks for all the fitness and food inspiration.
