The Lightest, Fluffiest and Most Cake-Like Pancakes Ever

Good morning and happy Sunday!

Pancakes were on the menu for breakfast this morning, so Mal made his special recipe for the lightest, fluffiest, and most cake-like pancakes ever. He’s been making this recipe for years and it’s one of our very favorites. It’s super easy, totally delicious, and always turns out well. Definitely keep this recipe in mind for your next pancake breakfast!

Ingredients:

  • 1 cup 365 Organic Buttermilk Pancake & Waffle Mix (or Bisquick)
  • 2/3 cup milk (I used almond milk)
  • 1 tbsp oil (I used canola oil)
  • 1 egg
  • 1/4 cup sour cream (Greek yogurt will work too, but sour cream is so much better!)
  • fresh blueberries (optional)

Directions:

  1. Mix all ingredients together until smooth.
  2. Pour batter onto a pre-heated, lightly oiled griddle. Cook  on medium-low heat and flip ounce.
  3. Serve immediately with syrup, jam, nut butter, or fresh fruit.

Makes 2-3 servings (six 4-inch pancakes)

    btw, do you know what’s up with the ads that keep taking me away from your content? i start reading a post & they take me away from the page…super annoying and sometimes I can’t get back to your blog post, and I can’t imagine it’s helping your traffic. Just thought you ought to know, in case you didn’t know it was happening!

    1. @Amanda: might be a virus on your computer. I don’t notice that happening and I have had that happen to me in the past and it turned out I had spam or something similar that had infected my computer.

  2. I just said this past weekend to the hubby that I only like blueberries when they are in a baked good or pancakes. I will definitely have to try these.
