Today I’m delighted to be guesting on Carrots āĖn’ Cake because I’ve been following Tina’s blog for quite some time now. I was first drawn to CNC when I saw that Tina likes CrossFit and Tina likes cake. Honestly, that’s all I needed to know to love her!
I’ve been doing CrossFit for a bit now but more recently I’ve started focusing more on powerlifting. A day without lifting is like a day without sunshine in my world.
When I owned my cupcake bakery people always asked me how I stayed in shape and the answer was always CrossFit. It’s hard to feel fit when you’re surrounded by sugar so I was thankful to have CrossFit in my life even if I couldn’t put the energy into it that I needed to in order to improve. It helped keep me sane and that’s what mattered.
Then when I closed my cupcake bakery after winning Cupcake Wars I had more time to dedicate to CrossFit but I also started writing The Dollop Book of Frosting so I was still surrounded by sugar! I do love sugar though.
When you’re writing a cookbook you have to do a lot of tasting. There’s just no way around it. I remember spending nights sifting sugar with one hand and stuffing spinach in my mouth with the other hand in the attempt to strike some sort of a balance.
That’s why I felt the need to create at least a few Paleo-inspired frosting recipes in this frosting cookbook. I wanted to be able to feel good eating frosting after crushing a wod or hitting a deadlift PR (deadlifting is my favorite).
Enter this Coconut Almond Frosting and Cashew Chocolate Bacon Bark!
(Note: I call this bark but it’s actually more of a crumble. Tomato, tomah-to.)

This Coconut Almond Frosting is so versatile that you can spread it on cupcakes, mix it with gluten-free oats and sliced bananas, or mix it with bacon and nuts and bake it into a bark (crumble) for an extra protein-packed treat!

Throughout The Dollop Book of Frosting I show you 45+ more awesome things you can do with frosting such as make a pie crust or bake nachos. There’s also a unique baking recipe and additional creative uses paired with each frosting. It gets a bit crazy but its all been tested (and worked off, thankfully) and I must say, it’s all really good!
