The best part of my morning involves this little guy:
Monday through Friday at 5:45 AM, Mal wakes up for school and Murphy wakes up for breakfast. While Mal showers and gets ready for the day, Murphy inhales his food in 60 seconds and then comes back to bed to with me. (Yes, my dog is super lazy.) Murphy and I only cuddle for about 10 minutes or so, but it’s easily my favorite part of the morning.
Breakfast is my second favorite part of the morning!
Today: Overnight Oats In a Jar mixed with mashed acorn squash, quinoa, soy milk, maple syrup, cinnamon, and ground flaxseed meal.
And iced coffee with soy milk.
Last Night’s Dinner
Winner winner chicken dinner! I made Pan-Roasted Chicken With Lemon-Garlic Green Beans, which was so simple and turned out wonderfully.
You could pretty much use any kind of vegetable with this recipe. It called for red potatoes, but the ones at the grocery store looked disgusting, so I opted for the yellow variety. Brussels sprouts, onions, broccoli”¦ they’d all work with this recipe too.
I also sort of winged it with the lemon marinade. I added extra garlic and some Meyer Lemon Vinaigrette for even more flavor. It turned out great.
Dessert was a “special” treat: a Crispin/Mutsu apple with cream cheese fruit-dip.
