I'm Tina

I’m the owner of Carrots ‘N’ Cake as well as a Certified Nutrition Coach and Functional Diagnostic Nutrition Practitioner (FDN-P). I use macros and functional nutrition to help women find balance within their diets while achieving their body composition goals.


An in-depth, 4-week reverse dieting course for women who feel like their metabolism has slowed down, think they might have hormonal imbalance and can’t lose weight no matter what they do.

I have some exciting news to share with you guys. In May, I’ll be participating in Reach the Beach, an overnight 24-hour running relay! Woohoo!


Remember when I did the Cape Relay last spring? Well, from what I’ve heard, Reach the Beach is bigger and better!

The best part about this relay, however, is that I’m doing it with a fabulous lady blogger team! Check out this all-star cast:

I’m sure you recognize some of those names and blogs. All of them are great, FUN women, so I’m psyched to be on a relay team with them. Our team is named “Off Balance” in honor of our wonderful sponsor, New Balance.

Reach the Beach has two relay options: one in Massachusetts and one in New Hampshire. Our team will be participating in the Massachusetts relay, which begins at Mount Wachusett Ski Area and ends at Horseneck Beach in Westport. The relay will cover 200 miles over the course of 24 hours, which means each of us will run 3 legs of the race, ranging from as short as 2.8 miles to as long as 8.3 miles. I can’t wait!

I made granola yesterday afternoon, so as soon as I woke up this morning, I knew exactly what I wanted for breakfast: plain Greek yogurt with granola and blackberries. Mmm”¦ so good!

I woke up feeling pretty dehydrated this morning, so I drank water with breakfast and then poured myself a glass of iced coffee with soy milk a little while later.

Homemade Granola


  • 3 cups rolled oats
  • 1 cup cashews
  • 1 cup sunflower seeds
  • 1/2 cup raisins
  • 1/2 cup dried cherries
  • 1/3 cup flaxseeds
  • 1/3 cup canola oil
  • 2 tsp ground cinnamon
  • 1 tsp salt
  • 1/3 cup honey
  • 1/4 cup brown sugar
  • 1 tsp vanilla extract


  1. Preheat oven to 300*F
  2. Combine all ingredients in a large bowl and mix well.
  3. Spray two baking sheets with nonstick cooking spray and spread granola mixture evenly on them.
  4. Bake for 40-45 minutes, stirring occasionally.
  5. Allow to cool before serving.

Makes 4-5 cups

  1. I love relays! I ran my first one last year and was hooked! I am running the Wasatch Back Ragnar in Utah this June with some co-workers, can’t wait!

  2. Sweet! Thanks for the awesome granola recipe! I’m always looking for new ways to change up my morning breakfast routine and this sounds really tasty. I’ll definitely be giving it a try very soon! Unfortunately, not since high school have I ever run a relay. I have a feeling no one would want me on their team. I’d totally be the weakest link and cause the whole team to lose. Oh well. I’m a really great spectator!

  4. Brilliant post, Tina, and I hope you find RTB to be the best relay experience ever! I ran it last year and loved it… I was runner #2 which was quite a nice leg as my runs started off shorter and was finished by 8am on Saturday morning to relax while 10 of my other teammates still had to finish 🙂

  5. What fun!! I want to do the relay that goes from Lancaster PA to the Poconos. It gains a crazy amount of altitude and is over 200 miles. I had people convinced to do it last year but it landed on a weekend that my husband’s rugby team had a game (and most of the people I had on my “team” were on the rugby team too). Maybe I will find another good one!

  7. This is great! I actually saw this race advertised and forwarded it to my fitness friends to see if I could round up a team. But, unfortunately they are not as interested in it as I am. Who knows though, maybe I’ll see ya there 🙂
