Baked parsnip chips. I’m not sure if parsnips could taste any better. But, really, what vegetable cooked in oil and salt wouldn’t taste pretty good? ๐Ÿ˜‰


Here’s how to make them:

Preheat oven to 425*F and then cut two parsnips into thin โ€œchip-likeโ€ย pieces (the thinner, the better).


Put parsnip slices into a large mixing bowl and add 3 tablespoons of oil. (I used butter flavor grapeseed oil, but olive oil, peanut oil, sesame oil, etc. would work too.)

Coat slices with oil and then spread evenly on a baking sheet. Sprinkle with sea salt.


Bake for about 15 minutes until edges of parsnip chips turn a golden brown.

Remove tray from oven and transfer chips onto a plate covered with paper towels to absorb the extra oil. Allow to cool before serving.


I have to admit, I like these chips better than regular potato chips. There’s a lot more flavor and the texture is thick, firm, and crispy. Basically, they’re a cross between a French fry and a potato chip. Big fan.


I’m definitely making these for our next get-together. Maybe football this Sunday?


So, I did something very bad today: I dyed my hair. ๐Ÿ˜•


I know, I know. I’m supposed to be taking better care of my hair after totally abusing it for the past few months, but I couldn’t stand looking at my ugly orange highlights anymore. They were once a lovely golden brown, but using โ€œwhateverโ€ย shampoo was on sale at CVS completely destroyed them.

I’m pretty sure using an at-home box of dye is the worst thing that I could do to my hair, but at least I used one that is โ€œclinically proven less damaging!โ€ย ๐Ÿ˜‰ Let’s hope so! Right now, my hair feelsย fairly healthy, but we’ll see what happens in the next few weeks.


So, my husband is typically a very observant person. He’s good with the whole โ€œattention to detailโ€ย thing, especially with regard to the house, finances, Fantasy Football, video games, small print on coupons, etc. But, when it comes to my hair, he’s totally oblivious. He’ll eventually notice a change, but sometimes it takes him daysโ€โ€even weeksโ€โ€to notice. Maybe it’s a guy thing?

It’s funny because my sister and my girlfriends notice almost immediately when I change my appearance, especially my hair. My friend, Marie, for instance, notices when I simply blow dry my hair! I guess it’s just a girl thing? ๐Ÿ˜‰

Anyway, I thought it would be fun to guess how long it will take Mal to notice my new hair color. How long do you think it will take him?



  1. Haha, I always tell my husband that I’m getting my hair done so that he knows to say nice things, whether he notices the difference or not. It’s just better that way ๐Ÿ™‚

    By the way, I just got my color done at an Aveda place and she suggested I use their color care shampoo but ONLY for a week. This bottle should last me a couple of years at that rate! Definitely worth the cost to save my expensive highlights I think.

  2. I guess that depends on how tired he is when he gets home. My husband notices stuff like that right away, but he is an artist and notices way more than I want him to sometimes! The chips look really good. Have you ever tried making chips in the microwave? It is really easy and super fast.

  3. I cut six inches off my hair once and my BF didn’t even notice. Haha! Buuuut since you’re married and he sees you pretty often, I’m gonna go with a few days? Or maybe just until he sees the box of dye in the trash…

  4. I don’t think he’ll notice until you hit him on the head with a frying pan. My hubby only notices when I do DRASTIC changes ie: from shoulder lenth to pixie cut or from super curly to straight as a board!

  5. My guess is Dec 20th! Does Murphy go crazy after you color your hair? Winston always smells my hair after I’ve had it colored or styled because it smells so different! I think it’s kind of cute.

  6. My fiancee is the same way, total guy thing. The only time he noticed was when I went to a new stylist (first and last time I saw her) and she put a butt load of platinum blonde highlights (in my light brown hair) right at the top of my head. His reaction was: “Your hair looks gray.” Oh great, thanks.


  7. It is definitely a girl thing to notice changes in appearances. My dad never notices when my sisters or mom gets a hair cut or highlights. I bet i’ll take him until Saturday ๐Ÿ™‚

  8. I am actually a girl who doesn’t tend to be very observant about these types of changes. I’ll notice if it’s a big difference … but more often, I’ll notice a cute outfit.

    The parsnip chips look delicious!

  9. You’ll probably catch him glancing at you trying to figure it out because he’ll know something’s difference but can’t put his finger on it.
    I guess it depends on how drastic the change is….

  10. Hahaha, my husband is the same way. I’ve literally dyed my hair bright red, cut 8 inches off it, etc… and he never really thinks it looks any different. Men!

  11. I <3 parsnip fries and chips! I look forward to making them this week, as I have parsnips coming in my CSA today.

    I don't know how long it'll take. I know with my SO, he usually notices that "something" is different right away….but he can never figure out what. He'll stare at me…I'll catch him doing it…throughout the day. Finally when he can't take it anymore he'll venture out and say something:

    "Is that a new shirt?"


    "….Did you get your eyebrows done?"


    "Uhm….did you….cut your hair?"


    "Um…is it a different color?"


    "Oh! It looks nice!"


  12. Hey – I haven’t commented before but thought I could chime in on this one after 14 years of experience with hair dye. My hair also always turned the nasty orange-brown color after dyeing it at home with drug store hair dye.

    I finally got so frustrated that I mentioned it to my hairstylist, who told me that the levels of chemicals in the dyes is a lot higher than the kind they use at the salon. She suggested I try a semi-permanent dye in the salon to avoid the dreaded orange halo. I did- and it’s the best decision I’ve ever made for my hair.

    Since it’s semi permanent the salon color doesn’t do as much damage, but it also never turns my hair orange – ever – and it lasts for LONGER than the drug store permanent color did (about 3 months). How about that?

    And my hair feels a lot healthier. Turns out I didn’t need to change the shampoo or conditioner I was using, I needed to change the hair dye itself!

  13. It takes guys forever, haha. ๐Ÿ™‚ I’m guessing he’ll probably notice this weekend, but probably not this evening– it’s harder to notice a difference indoors sometimes, just because it’s darker.

  14. It took my boyfriend over a week to notice once – and he only did because one of our GUY friends complimented me!!!!! ๐Ÿ™‚

    I think you should post before and after pictures so we can tell how different you look! I’m going to bet it takes Mal 3 days… lol

  15. It’s totally fine to use those hair dyes..they have evolved so much since they were ‘bad’. No worries whatsoever. When I was brunette I was dying my hair every 3 weeks and it was the healthiest it had ever been!

  16. If he’s like my brother in law….then never!! Haha. He never notices anything new his wife has on or when she get she’s gotten her hair done. Now my husband(my BIL’s brother) notices everyhting! He’s good like that!! I’ll give Mal the benefit and say he’ll notice tomorrow ๐Ÿ™‚

  17. I’m pretty impatient with people who don’t notice when I change my appearance. It goes like this,


    “My new hair color looks good, doesn’t it?”


  18. I’m the worst at this. I can never tell when people do things to their hair so I never expect my husband to notice either. And yet….he’s better than me!

  19. My hubby notices any physical change immediately lol even if I didn’t do anything to my hair, he asks me what I did to it haha! (I kinda like that actually! :)) I would like to think Mal will notice your hair by this evening, dinner time maybe?! Okay tomorrow evening the latest! But wait, doesn’t he read your blog??

  20. My husband never notices mine, either. I have been wearing my hair a different way and colored it for about a week now and he hasn’t said a thing. Maybe they notice and just don’t say anything?

    Probably wishful thinking ๐Ÿ˜€

  21. I give him less than two weeks haha i hope! Yea, my hair has a terrible line where my color is growing out, but I am trying to hold off dying it to avoid damage. My mom says I should dye my hair unless I have to and am going gray lol, maybe she’s right, but I completely understand why you did want to wait ๐Ÿ™‚

  22. my husband rarely notices changes, but then again things seem to always be changing whenever someone does my hair/makeup for shoots/events. to be fair, i don’t notice when he gets a haircut or shaves, either.
