Guys. We are obsessed with this recipe in our house. OB.SESSED. I’ve already made it four times now because 1) it’s crazy delicious and 2) it’s so incredibly simple to make. And, unlike a lot of cheesy pasta dishes, this one is actually somewhat healthy. A serving has less than 400 calories, 16g protein, 50g carbs, and 13g fat. Not too shabby! I hope you enjoy this dish as much as we do!

Hi, friends! Happy Tuesday! I hope your week is off to a fabulous start! Breakfast I woke up hungry yesterday morning, so I cooked myself a big ol’ breakfast””complete with an omelet, home fries, and cantaloupe. I’m actually quite impressed with this breakfast. Usually during the week, I just eat whatever is easiest/quickest to make, but I went all out yesterday. I actually needed to roast some potatoes for a couple of recipes later in…

Hi, friends! How’s your Halloween going so far? Have you had any candy yet? I enjoyed a mini Twix with my Dandy Blend this morning and it was fabulous. Snack Yesterday was a rest day for me, so I took Murphy on a 2-mile walk around our neighborhood. When I got home, I snacked on some pistachios before dinner. Dinner Dinner was Paleo Pad Thai with chicken, broccoli, red bell pepper, onion, and scallions. Yum….

I love this quote. And it reminds me of a conversation I had with Mal a few weeks ago. On the drive home from CrossFit one night, I was bummed about the workout I had just done. I finished and had fun, but I wasn’t especially proud of my performance. I actually had a few workouts that week I wasn’t super happy with performance-wise, so I asked Mal how he thought I could improve. He…

Hi, friends! I have a hot date with my couch and Parks and Rec in a little bit since it’s LITERALLY my favorite show on TV right now, so I’m going to whiz right through this post. Snack A few hours after breakfast, my stomach started to grumble, so I threw together a quick snack of carrot sticks, Wheat Thins, and garlic hummus. Such a good snack. Honestly, is there anything better than Wheat Thins…

Apparently, good things come in threes because the last 24 hours have been pretty awesome for me: I appeared on The Dr. Oz Show with the Cookie Monster. My friend Jen asked me to be a bridesmaid in her wedding.  I passed the NASM Certified Personal Trainer exam this morning!!! Obviously, I am smiling ear-to-ear right now. I’m so glad that all of that studying paid off! I’ll talk more about the NASM exam in a…

Another crazy exercise science blog post title! I know you love ”˜em! I’ve been meaning to write another SCIENCE post (aka interesting things I’m learning from NASM), so when I received an exercise question from a reader this morning, I knew it would be the perfect way to introduce Excess Postexercise Oxygen Consumption (EPOC) (aka “exercise afterburn”) to you guys. The “afterburn” is how many additional calories your body burns after a workout in order…
