Happy Friday! It’s a snowy, yet warm-ish, morning here. It’s very strange, but sort of pretty, too. We ran out of iced coffee this morning, so Mal, Murphy, and I headed to Marylou’s to get our morning fix. Yes, the drive-thru is bright pink! Love it! I ordered a Peanut Butter Wonderful iced coffee with milk and no sugar””it’s plenty sweet without it! Breakfast For breakfast, I whipped up a Pumpkin Oatmeal Pancake to which…

I got my butt to the gym this morning and took a “conditioning” group exercise class at BSC (aka my new gym for the next month). While we waited for the instructor to arrive, a guy standing near me started to complain about how last week’s class was really tough. The woman who he was talking to agreed and joined in on the complaining. As I listened to their conversation, I thought: YESSS!! This class…

It was inspired by the Gruyere & Mushroom Pressed Sandwich from Sandwhich in Chapel Hill. Mmm! Gruyere is so amazing. On the side: roasted broccoli and arugula with balsamic vinegar drizzled on…

Happy Friday! 😎 This week flew, didn’t it? Don’t ya love that!? I woke up super early again to write my Health post for this coming week. Initially, the words really started to flow, but then I got stuck. 😕 I thought maybe I needed some brain fuel, so I went to make breakfast instead. A full stomach always seems to help! 😉 Breakfast Mmmmm… oatmeal pancakes! I made an especially delicious one today! 😀 Some mornings,…

I used to make Oatmeal Pancakes all of the time, including pumpkin, blueberry, strawberry, and sweet potato varieties. An Oatmeal Pancake doesn’t take that much more time to make than a pot of oats, and I remember them holding me over until lunch without a problem. They’re delicious and satisfying– I wonder why I stopped making them? I guess this meal needs to be back in my breakfast rotation again!  Oatmeal Pancake Recipe from Katheats.com Ingredients: 1/3…
