I saved the best for last! This recipe for a Toasted Almond Butter & Marmalade Sandwich with Turkey Bacon is one of my favorite recipes from my “Lighten Up Cozy Comfort Foods” that I created for the Almond Board of California. This quick and easy meal is a fun twist on your regular, old peanut butter and jelly sandwich, and I promise it’s even more delicious. Made with low-calorie whole wheat bread, turkey bacon, creamy almond butter,…

Looking for a mid-morning or afternoon snack that is nutritious, satisfying, and tastes great? Well, look no further. This snack is for you! Made with rolled oats, brown rice cereal, almond flour, sliced almonds, and dried cranberries, these Almond Energy Bars will fill you up and please your taste buds at the same time. Unlike packaged energy bars, these ones are made from wholesome ingredients (none of that hard-to-pronounce, artificial stuff) and aren’t loaded with a ton of…

If you’ve read Carrots ”˜N’ Cake for any length of time, you know that I love pancakes, like love them. When I make them at home, I mostly stick to healthy versions because they fill me up and satisfy me much better than traditional recipes. That said, this recipe for Maple-Cinnamon Sweet Potato Pancakes is another one that I plan to add to my regular pancake rotation. Made with nutrient-rich sweet potato and satisfying almond flour and eggs,…

I’ve always loved smoothies. There’s just something so enjoyable, even comforting, about sipping a cold, creamy, and satisfying smoothie. It’s basically a treat in beverage form, and this recipe for a Pick-Me-Up Smoothie is exactly that: a treat! Made with banana, creamy almond butter, almond milk, espresso, honey, vanilla, and cinnamon, this smoothie has a wonderful, slightly sweet almond and coffee flavor to it. It almost tastes like dessert, but for less than 250 calories…

Love mac & cheese? Me too! But, of course, I don’t love how it’s loaded with calories and fat and usually falling short on nutrients. You know what I’m talking about, right? Pasta, cheese, butter, more cheese”¦ not the healthiest ingredients. With that in mind, I created a remade version using Brussels sprouts, spinach, Greek yogurt, reduced-fat cheddar, garlic, almond milk and almond flour. Quite the all-star cast, right? I pumped up the volume of…

I am so excited to share these almond recipes with you! As you might remember, I have teamed up with the Almond Board of California to create a number of new recipes that integrate different almond forms around the theme of skinny-ing up your comfort food. This means I took a bunch of my favorite cold weather/childhood recipes, remade them with ingredients like almonds, making them healthful and relatively low in calories. In fact, all…

Good morning! Just wanted to share some scenes from last week’s photo shoot for the Almond Board of California. Just in case you missed my previous post, I recently developed six healthy recipes and photographed them in a one-day photo shoot for them. Truthfully, I was a tad stressed out about this project because I’m not much of a photographer. Sure, I can snap funny/cute/ridiculous photos of Murphy on my iPhone, but when it comes…

Hello, hello! How’s your Monday going so far? I just got back from running a bunch of errands. I’m doing a big photo shoot for the recipes that I developed for the Almond Board of California on Wednesday, so I went out to buy some last-minute props and supplies. Tomorrow, I’m shopping for groceries and then cooking a few of the recipes ahead of time. Basically, Wednesday is going to be nuts (pun intended)! I’ve put…

Good morning!! I can’t believe I haven’t mentioned this until now, but I’m leaving for Cabo San Lucas tomorrow morning to visit the Esperanza Resort. I was invited along with some other media people for a three-day, two-night, all-expenses paid trip. Incredible. The Esperanza Resort was awarded #1 resort, #1 spa, and #1 service by Travel & Leisure in 2010, so I am definitely looking forward to my time there and seeing what it is…
