Mmm! Mal and I had an especially delicious dinner last night!
Oooh, yes”¦ all of my favorites foods in one nutritious, delicious, and satisfying meal!
Sweet Potato, Chickpea, & Brussels Sprout Salad with Bacon
Ingredients:
- 10 ounces frozen Brussels sprouts
- 2 cups roasted and diced sweet potatoes (approx. 2 medium sweet potatoes)
- 1 cup chickpeas
- 6 pieces of bacon
- 1 tsp garlic powder
- 2 tsp maple syrup
- 1/4 tsp sea salt
Directions:
Place frozen Brussels sprouts in a microwave-safe dish and nuke for three minutes. (This recipe would also work with fresh, steamed Brussels sprouts.) Remove Brussels sprouts from microwave, allow them to cool off a little bit, and then cut them in half.
Cook bacon on medium-high heat in a large frying pan on the stovetop for 4-5 minutes. Flip each piece of bacon and then add the Brussels sprouts. Once bacon is finished cooking, remove it from the pan and continue to fry Brussels sprouts in the bacon grease. I recommend flipping all of the Brussels sprouts over onto their flat side, so they get a nice roast on them.
Once the Brussels sprouts are finished cooking, add them to a large mixing bowl with sweet potatoes, chickpeas, garlic powder, maple syrup, and sea salt. Then, break up the bacon using your fingers and add it to the bowl. Finally, mix everything together and enjoy!
Makes 2-3 servings (1 Mal-sized serving + 1 Tina sized-serving)
Yum! I am so happy with how this meal turned out. It’s pretty much all of my favorite foods in one dish, so how could I not like it, right? I loved how all of the different flavors came together, especially the salty + sweet combinations.
Question of the Day
Which food is your favorite: sweet potatoes, bacon, or Brussels sprouts?

I LOVE this recipe idea! I knew it was only a matter of time before you found a delicious way to combine sweet potatoes, Brussels sprouts, and bacon. Plus, I also love adding chickpeas to anything to add some flavor and creaminess. I definitely will try this one out soon! Thanks for all the great ideas.
Delicious!! Definitely want to try this (minus the bacon). Healthy comfort food, yes please.
I think you may mean broccoli in your statement below?:

Recipe sounds great except for the bacon since I’m a vegetarian! Wonder what could be subbed for the salty flavor??
Thanks Tina!
Nope, I meant Brussels sprouts, but I bet broccoli would work too! 🙂
Thanks for getting my head out of the clouds — I wasn’t paying attention to the frozen vs fresh. Geez! Is it Friday yet? I’ll be heading to Newport next week and I’ll be thinking of you!
Oh goodness, YUM! I agree – definitely all of my favorite foods in one dish! Can’t wait to try this!
Wow, that looks super yummy! It’s very unique, too with the addition of maple syrup (truly one of my favorites) and I like how everything is well incorporated. Definitely bookmarking this for future reference!
i LOVE brussel sprouts! for years i thought i hated them, because i think its just a thing to hate brussel sprouts growing up, but they’re delicious. this sounds like a great summer recipe!!
all of my favorites in one bowl!
Brussels sprouts are our new found love. And I’m a sucker for sweet potato! This would make a great work lunch, easy to heat up!
:-O
that looks FANTASTIC!!! i’m a vegetarian but will def make this and sub smoked tempeh for the bacon.
thanks for sharing!

Sweet potatoes…simply roasted with coconut oil, drizzled with coconut butter…heaven!
Omg yum!!
I love brussel sprouts but am scared of frozen varieties. Do you have advise on which ones are best?
This recipe looks amazing!! I am definitely going to try it!!!! Hmmmm it is definitely a toss up. I absolutely love Sweet Potatoes but then there is Bacon, which I could put on anything. Brussel Sprouts are yummy but not my favorite of the three. Definitely a toss up between the Sweet Potatoes & Bacon 😛
Brussel sprouts all day, every day. I love them roasted with olive oil, salt and pepper. Doesn’t need anything else to be delicious, but bacon is a welcome guest now and then! Chickpeas are a good way to get folate and protein in your body!
Brussel sprouts, all day every day. Fresh Brussels roasted with olive oil, salt and pepper is my favorite way to prepare them, and almost any vegetable. Chickpeas are a great way to get some folate and protein into your body!
What kind of maple syrup do you use? Is it sugar free?
Pure maple syrup! 🙂
Definitely sweet potatoes! Roasting some for dinner tonight!
I don’t even like brussel sprouts but this salad looks good.
Mmm bacon! I could probably eat it on anything, lol! I wish I like brussels sprouts… Maybe I’ll try them again. Cooking them in the bacon grease would probably change my opinion 🙂
It’s like you took my favorite ingredients and put it in a bowl! 😀
I love love love sweet potatoes but loving brussel sprout too lately…I used to like bacon but never really ate it much and don’t eat it at all now that I am a vegetarian.
YUMMMMM. I loooove brussels sprouts and will be making this soon!
This recipe is totally me! I’m super excited to give it a try!
This sounds truly amazing!! I cannot wait to try this with vegan “bacon” and with roasted brussel sprouts!
Yum! This sounds fantastic!
Yes! I have all the ingredients at home 🙂 Thanks for the dinner idea! My dinner for tonight was “salmon with whatever veggies we have on hand.”
This looks amazing. Tonight I’m making the Mama Pea sweet potato and black bean enchiladas that you previously posted.
I love those!! Enjoy!!!
Wow this looks amazing! I may have to try this next week. I see a lot of comments are people that are vegetarian, I do not eat red mean (but cheap with bacon sometimes shh!) but I may try vegetarian bacon! 🙂 I LOVE sweet potatoes… 🙂 This may sound crazy but I have never tried Brussels sprouts because they have a bad rep. One of your posts made me buy some so I have the frozen ones in the freezer, its just getting up the guts to try a new food and convincing the BF to try it with me! 😉
Thank you for this post!
Sara
all three of those foods are the best! i think i’d have to go with bacon as my favorite, though 😉
I love sweet potatoes!
Looks delish! I love all of those, but sweet potatoes are #1 in my book!
Wow, looks delicious! What a simple but satisfying recipe. I absolutely love sweet potatoes, but roasted brussels sprouts are a close close second.
I’m not a fan of real bacon, but I would definitely enjoy this recipe with turkey bacon.
Sweet Potatoes…yummy!
My favorite is definitely a close choice between sweet potatoes and brussels spouts! So yummy! I may have to whip up something similar when I get home!
I love bacon and BS together 🙂 They are so great. I also love sweet potato so this dish is a win for me 🙂
That salad looks DELICIOUS! I absolutely love chickpeas! They go well in and with everything. And you can used them in desserts, dressings, dips, etc. They are just awesome!
I buy mine in bulk, dry and cook them in my pressure cooker, it’s so fast and much cheaper.
I’ve actually never tried brussel sprouts but my husband hates them. I’m sure it just depends how you cook them. Anyways, I love roasted sweet potatoes!
I was trying to decided what would be for dinner tonight and i think I figured it out! I love all of those foods equally, but I think the brussel sprouts win by a slim margin!
I love chickpeas – I might have to try out this recipe.
I would make this without the bacon! Thanks for sharing.
I think I’m one of the lone commenters on here that would pick the bacon over brussels sprouts or sweet potatoes. I do like sweet potatoes, but seriously, nothing is better than the smell of bacon cooking!
Looks so good. I actually yearn for bacon (like my body wants and needs it) but I don’t buy it because I can’t find anything hormone-free. I’ve seen “country naturals” or “butterball” reduced salt all-natural bacon and the ingredient list looks decent, but again, its not hormone free which makes me uncertain.
Did you roast or bake the sweet potatoes prior? And what kind of pan is that? I’m not sure what kind of pot? pan? skillet? etc to buy to sauté and prepare food in. Like I have no idea how to properly cook food!!

Do you drain and rinse the chickpeas? I’m guessing they’re of the canned persuasion, right?
I soaked them overnight and then cooked them the next day, but canned chickpeas would work too!
At the bottom of this post http://www.sherocksfitnessnj.com/2013/07/09/work-it-off-wednesday-guest-post/ she shows a pic kinda like your banana-pb-egg scramble…looks yum.
Definitely the bacon 🙂 We eat tons around here..probably too much! I love that it’s mixed with the other flavors though, it sounds so interesting!
Absolutely fantastic, even my partner ate it and loved it despite the fact that I foolishly told him it was healthy before we sat down to eat
That’s awesome! So glad you guys liked it! 🙂
My sugar aka husband loves sweet potatoes more than anything and I love bacon and brussel sprouts! I am so making this. Thanks.
Great recipe – easy! 🙂
Wow- I just got hungry looking at that… too bad it’s bedtime. 🙂 What a delicious combo!
Ya know, I’ve never tried brussel sprouts! They look delicious here though!
Sweet potatoes for sure! Then bacon, then brussel sprouts! Love this recipe…Thanks!
