Sweet Potato, Chickpea & Brussels Sprout Salad

Oooh, yes”¦ all of my favorites foods in one nutritious, delicious, and satisfying meal!

Sweet Potato, Chickpea, & Brussels Sprout Salad with Bacon

Ingredients:

  • 10 ounces frozen Brussels sprouts
  • 2 cups roasted and diced sweet potatoes (approx. 2 medium sweet potatoes)
  • 1 cup chickpeas
  • 6 pieces of bacon
  • 1 tsp garlic powder
  • 2 tsp maple syrup
  • 1/4 tsp sea salt

Directions:

Place frozen Brussels sprouts in a microwave-safe dish and nuke for three minutes. (This recipe would also work with fresh, steamed Brussels sprouts.) Remove Brussels sprouts from microwave, allow them to cool off a little bit, and then cut them in half.

Cook bacon on medium-high heat in a large frying pan on the stovetop for 4-5 minutes. Flip each piece of bacon and then add the Brussels sprouts. Once bacon is finished cooking, remove it from the pan and continue to fry Brussels sprouts in the bacon grease. I recommend flipping all of the Brussels sprouts over onto their flat side, so they get a nice roast on them.

Once the Brussels sprouts are finished cooking, add them to a large mixing bowl with sweet potatoes, chickpeas, garlic powder, maple syrup, and sea salt. Then, break up the bacon using your fingers and add it to the bowl. Finally, mix everything together and enjoy!

Makes 2-3 servings (1 Mal-sized serving + 1 Tina sized-serving)

Yum! I am so happy with how this meal turned out. It’s pretty much all of my favorite foods in one dish, so how could I not like it, right? I loved how all of the different flavors came together, especially the salty + sweet combinations.

  1. I LOVE this recipe idea! I knew it was only a matter of time before you found a delicious way to combine sweet potatoes, Brussels sprouts, and bacon. Plus, I also love adding chickpeas to anything to add some flavor and creaminess. I definitely will try this one out soon! Thanks for all the great ideas.

    Recipe sounds great except for the bacon since I’m a vegetarian! Wonder what could be subbed for the salty flavor??

  7. This recipe looks amazing!! I am definitely going to try it!!!! Hmmmm it is definitely a toss up. I absolutely love Sweet Potatoes but then there is Bacon, which I could put on anything. Brussel Sprouts are yummy but not my favorite of the three. Definitely a toss up between the Sweet Potatoes & Bacon 😛

  8. Brussel sprouts all day, every day. I love them roasted with olive oil, salt and pepper. Doesn’t need anything else to be delicious, but bacon is a welcome guest now and then! Chickpeas are a good way to get folate and protein in your body!

    What kind of maple syrup do you use? Is it sugar free?

  10. I love love love sweet potatoes but loving brussel sprout too lately…I used to like bacon but never really ate it much and don’t eat it at all now that I am a vegetarian.

  12. Wow this looks amazing! I may have to try this next week. I see a lot of comments are people that are vegetarian, I do not eat red mean (but cheap with bacon sometimes shh!) but I may try vegetarian bacon! 🙂 I LOVE sweet potatoes… 🙂 This may sound crazy but I have never tried Brussels sprouts because they have a bad rep. One of your posts made me buy some so I have the frozen ones in the freezer, its just getting up the guts to try a new food and convincing the BF to try it with me! 😉

  14. That salad looks DELICIOUS! I absolutely love chickpeas! They go well in and with everything. And you can used them in desserts, dressings, dips, etc. They are just awesome!
    I buy mine in bulk, dry and cook them in my pressure cooker, it’s so fast and much cheaper.

  15. I’ve actually never tried brussel sprouts but my husband hates them. I’m sure it just depends how you cook them. Anyways, I love roasted sweet potatoes!

  16. I think I’m one of the lone commenters on here that would pick the bacon over brussels sprouts or sweet potatoes. I do like sweet potatoes, but seriously, nothing is better than the smell of bacon cooking!

  17. Looks so good. I actually yearn for bacon (like my body wants and needs it) but I don’t buy it because I can’t find anything hormone-free. I’ve seen “country naturals” or “butterball” reduced salt all-natural bacon and the ingredient list looks decent, but again, its not hormone free which makes me uncertain.

    Did you roast or bake the sweet potatoes prior? And what kind of pan is that? I’m not sure what kind of pot? pan? skillet? etc to buy to sauté and prepare food in. Like I have no idea how to properly cook food!!
