Hi, guys! Another “Quinn and Mumma” day is in the books, and I have to admit it was one of my favorites to date! ๐Ÿ™‚

It started like a lot of them with snuggles and TV on the couch followed by breakfast. This particular morning, Quinn requested oatmeal for breakfast. OATMEAL, people! Apparently, they eat it at his school, and he really likes it. Being the oatmeal fan that I am, I jumped at the chance to make it (with “brown sugar,” of course). I even added a little extra brown sugar and talked it up the best I could as a super special bowl of oatmeal. (I mean, it was the first time he was going to it eat at home, so I was pumped. New foods for picky eaters are very exciting!) I also made myself a bowl of oatmeal, so we could eat the same breakfast together.

Well… Quinn sat down at the table with me, took one look at the oatmeal, and said he didn’t want it. Whomp whomp. I tried to figure out why, but he said he just changed his mind and wanted a PB&J Bar and yogurt smoothie instead. Ughhhh, it was such a let down. I didn’t make a big deal of it, but I was bummed. Oh, well. Maybe next time, right? At least we know that oatmeal might be a breakfast option soon enough!

After breakfast, we got ourselves ready for the day. I had a few client check-ins to do, so Quinn put the finishing touches on his sunglass stand while I chatted with them. How cool is Quinn’s sunglass stand?! He’s obsessed with it and chooses a new pair to wear like 5 times a day! ๐Ÿ™‚

Once we were ready to go, we headed to the gym. I ran on the treadmill while Quinn played in the playroom. It was a quick trip because we had quite the agenda planned for the rest of the morning.

After the gym, we stopped by the grocery store and then headed straight to swim lessons. If you follow me on Instagram Stories, you might have seen our little fish swimming under water. Just like that, our “baby” can swim! It really seemed to happen overnight.

Quinn did such a great job swimming under water, he moved up to the next level!! He was so proud of himself, and I can’t even explain how happy I was for him. It was a proud momma moment for sure!

Before we left, Quinn took some time to freshen up and blow dry his hair! ๐Ÿ™‚

Back at home, we were both hungry for lunch. It was a busy morning, so I’m glad that I had some items prepped ahead and ready to go. I made some roasted sweet potatoes and onions in my air fryer and added them to a Maria & Ricardo’s tortilla along with an easy cashew cheese for quite the delicious lunch!

I recently partnered withย Maria and Ricardoโ€™s, who makes authentic, wholesome, andย seriously delicious (non-GMO) tortillas. I’ve actually been a fan of the brand for many years now, so I’m really excited that we’re working together! I spread some cashew sauce on anย Original White Flour Tortillaย and then topped it with sweet potatoes, onions, and arugula for a quick, delicious, and nutritious lunch!

The wrap was so easy to make – thanks to some meal prep earlier in the week. Once the cashew sauce and veggies were made, it came together in a matter of minutes. It’s also super customizable based on your taste preferences and what’s in your fridge. Really, the options are endless as far as veggies go! ๐Ÿ™‚ I have a feeling you’ll see this lunch (or variations of it) again and again on CNC!

After lunch, Quinn had some quiet time while I showered and cleaned up the house. His school holiday pageant was later that night, and we were hosting Papi and his girlfriend, Lori, for drinks and apps before since they were planning to attend. Our house was a complete disaster, so I had some work to do!

Unfortunately, Boston traffic to the South Shore ended up sending Papi and Lori straight to the pageant location due to time constraints. We didn’t have our “happy hour” with them, but we all still had an awesome time at “The Grinch Who Stole Christmas.” Quinn really enjoyed himself and did a great job as a “Who!”

  1. I am a vegetarian and this time of the year our family is all about soup! We have soup and homemade bread night every Monday. I have many old favorites and I just made a great new soup from the new Forks over Knives cookbook-sweet potato tortilla which was awesome ๐Ÿ™‚ I would put sweet potatoes in everything if i could-ha, ha!

  2. I am a vegetarian and I am loving soups right now! My family has soup and homemade bread night every Monday in the winter. I have a lot of old favorites, but we just tried a new soup from the new Forks over Knives cookbook-sweet potato tortilla, which was great! My husband jokes that I would put sweet potatoes in everything if I could-ha, ha!

  3. I have a picky eater. Is it possible they use quick oats or instant oats at his school? My kiddo will gobble down instant oatmeal (maple and brown sugar) but gag on whole rolled oats. A lot of his picky eating is from texture issues.

    1. I agree! My school age kiddo will gobble the quick oats but not the rolled. It “looks” different AND it is a different texture.

  4. Totally random, but have you tried the two ingredient banana oatmeal โ€œcookiesโ€ with Quinn? Theyโ€™re a favorite around here (even when my little hated bananas) and you can add whatever you want to them. If heโ€™ll eat them, itโ€™s an easy oatmeal hack!

  5. Oh my gosh how cute!! I can’t wait to have kids so I can go to cheesy holiday pageants haha! And better luck next time with the oatmeal. Fingers crossed he’ll request it again soon – and actually eat it!

  6. I second Karen’s thought (having raised two picky eaters) How do they make oatmeal at Quinn’s school? When my boys asked for something when they were little, even though they asked for something “general” like “oatmeal” they always had something very specific in mind. Like “specific brand name instant oatmeal in a specific flavor with a specific brand of milk poured over it.” And it was never what I thought it was!

    As college students, both of my boys are pretty good eaters. So there is hope!

  7. I am ALL about Wegman’s frozen brown rice with some frozen veggies and their sweet chili sauce. SO good! And easy to pack for work.

    My son won’t touch rolled oats but quick or instant is all the rage. He tells me it looks funny and by the look on his face the texture isn’t a go.

  8. I have been loving “B”LT’s but with tempeh bacon (usually homemade, but sometimes store bought). I used to use wraps all the time and I haven’t in so long, but that wrap looks so good I may have to grab some this weekend ๐Ÿ™‚

  9. Ever since you posted your mashed potatoes doblada’s I’ve kept it in the back of my mind to add potatoes into our quesadillas or burritos. We made roasted potato and black bean quesadilla’s (with the Maria & Ricardo’s tortilla’s thank you very much!!) and MAN it was delicious and filling! Thanks for the vegetarian inspiration!

  10. Aw, look how adorable Quinn’s show is! I can’t wait to attend my little ones’ school plays when I have kids. Hopefully they’re little thespians like me! As far as plant-based meals are going, I am LOVING roasted tempeh lately. It’s full of protein and has a delicious, almost nutty flavor. Anyway, I pair that with everything from veggie “fried” rice to processing it with walnuts to make tacos and even adding it to avocado toast for a punch of protein. So stinking delicious!

  12. I made black bean tempeh tortillas with peanut sauce for a cooking class I taught and they were a hit! I just got a air fryer but have not had time to play around with it.
