And I love that it only requires 4 ingredients, so you can whip it up in a matter of minutes! (Ok, now I have a major craving for this juice. I might just need to go make myself one!)

Some eats from today”¦

Breakfast

Breakfast ended up being eaten in two parts today. First, I made myself some toast with almond butter and banana slices on top. On the side, I had a container of Greek-style coconut milk yogurt. It seemed like a nice, balanced meal until I tasted the coconut milk yogurt. Eh, not a fan. In theory it sounded delicious: Greek yogurt made from coconut milk? It seemed like it was right up my alley, but the taste and texture just wasn’t for me.

I hate wasting food, so I mixed the yogurt into a smoothie made with frozen peaches, almond milk, and a handful of fresh baby spinach, which was an awesome decision. Mmm!

Lunch

A few hours later, I whipped up an egg sandwich with ham and Light Creamy Swiss from The Laughing Cow on a toasted, buttery English muffin.

FYI: The key to really delicious egg sandwiches is butter””on your English muffin for sure and to cook your egg, unless you cook your egg in leftover bacon grease, which also tastes incredible.

Random side note: I can’t believe I avoided butter in my diet for so many years. Not kidding, it was probably a good 15 years that I wouldn’t add it to my food or cook with it. Growing up a friend’s mom told me butter would go right to your butt and make you fat, so I always avoided it. Oooh, how things have changed in recent times!

Anyway, back to lunch”¦

I ate my egg sandwich at my desk while Murphy stared it down. I swear, this dog acts like we starve him!

Now, I am snacking on cantaloupe as I blog”¦

And then I’m taking Murphy for a long walk and then making dinner. No CrossFit tonight. I’m exhausted, so my plan is to chill out and relax on the couch tonight.

  1. I didn’t care for that yogurt myself, then again I also don’t care for the coconut milk even though I like coconut. I did however like the chocolate flavored ice cream they make, but the milk does make tasty smoothies and my brother was all for it mixed with his protein powder! I hated raw peppers when I was younger but I love them now the yellow are my favorite mixed in a salad or with hummus yummy!

  2. Meat and Fish! I was vegan for 12 years and last month decided to eat meat again having reintroduced eggs in January! I’m loving it…beef, chicken, pork, salmon, sardines, cod, monkfish, prawns, crab…I’ve been trying it all!

  3. I felt the same way about coconut yogurt, takes some getting used to. Or you can hide the flavor.
    Ever since I found out I am pregnant, I cannot stop snacking on fruit. Lately it has been berries, grapes and pineapple. I’m a machine!

  4. Talking about cooking the egg in bacon grease; my mom uses it for cornbread (from ATL) and I will never eat cornbread cooked another way. I live a very healthy lifestyle and this is one thing worth it! Melt the bacon grease in a cast iron skillet then pour batter in!

  5. I recently discovered my great love for wheat bran. I had some bran muffins at the cafe near my work and was buying them 2-3 times a week. Finally, I decided that I just needed to make my own so I bought a big ol’ bag of wheat bran and whipped up some really healthy, low sugar bran muffins. They probably sound terribly boring but they are amazing!

  6. Amen on the butter front! I reluctantly ate butter-free for a short while, now I’m slathering baby! Butter forever!

  7. I’ve wanted to try that coconut milk yogurt. Perhaps not.

    I used to avoid nuts because I didn’t like the taste and thought they were too fatty compared to other snacks. But these days, I eat tons of nuts, either as a snack, on a salad or in my breakfast every single day. Now I couldn’t live without them!

  8. Ha, I change my mind about food all the time. I constantly fluctuate between “Life’s too short not to eat ___” and, “I could have a longer life if I had a little less ___.” Healthy moderation! You seem to have it down.

  9. I love that yogurt, although I like the almond milk one better. It has a bit more protein, too. I usually get the plain and add some stevia and almond milk to it to thin it out, otherwise it is a bit too thick.

  10. I have not been too impressed with coconut-milk-turned-dairy products. I think the trick is to not expect it to be the same thing.

    For a while there I’ve avoided fruit because of the sugar. You know, all the horrible sugar fruit has that will make you fat. I like the paleo approach, but just like with everything, you can get it wrong too! I have finally come to my senses; just this morning I had a huge hunk of cantaloupe with breakfast!

  11. Oh I totally agree with you about the coconut greek yogurt I was not a fan either! Something I have started eating again that I thought I didn’t like is cheese! I don’t know what got it in my head that it was bad but I am so glad I made my way back to it 🙂

  12. I had higher hopes for coconut greek yogurt. I didn’t dislike it, but I thought it would be better. I seriously crave an egg sandwich every time you write about them. They are one of the most addictive foods for me…

I’ve been on an egg sandwich kick lately myself but have a weird thing about having to grill my english muffin on the griddler – so much better when it’s pressed in the panini press for some reason. I’ve been doing a fried egg, avocado and turkey bacon – such a good combo that I never get sick of:)

  14. I actually really love coconut milk yogurt (almond milk yogurt too)! I haven’t had it in a long time now, mainly because it’s rarely on sale and regularly pretty expensive here.
    I didn’t eat butter for a long time either but I certainly do now – so glad for that! organic butter is the way to go.

  15. I’ve started loving asparagus and brussel sprouts which I despised for as long as I can remember. I learned that my parents sucked at cooking it and I rock! haha MELON… couldn’t get enough melon when I was pregnant!

  16. I have recently changed my mind about fat in general. I lost a significant amount of weight and was very aware of the amount of fat I was adding to my diet. However, I have found that olive oil and avocado have been really helpful in keeping the weight off. Also, I’ve learned that a lot of the nutrients in veggies are fat soluble, so olive oil on your salad and roasted veggies won’t just taste good, but will help you get the most out of your food.

  17. What I have recently changed my mind about is eating everything, “Low-Fat.” I went through a time in my life that my lunch was a Lean Cuisine. I would eat yoplait low-fat (SUGARED) yogurts and skim milk. But since I have started CrossFit and investigating more into fueling myself, I have realized that the low-fat products are NOT the best or the healthiest way to eat. Plus, a lot of the prepared frozen meals are full of additional stuff. And I realize that fat doesn’t make you fat. Low-fat is a tricky slope, because sugar is fat free. So, take out the fat, and add in tons of sugar, of COURSE people are going to love it!

    2-years ago – Low Fat, low calories, eat all the processed weight watchers food that you can find, because it is low in points

    Now – Whole foods, full fats and limit sugar to small amount per day and try for a natural one, like maple syrup or honey. And when you are hungry eat something, but focus on protein and veggies!

  18. Lately I have been changing my mind about meat. I was vegan for many years, and then started eating meat again! I loved it and craved it for over a year. All of a sudden, the thought of eating it makes me feel icky. So I have been again eating mostly vegan – which I am sure will change in a few months again 🙂 I just always try to do what my body tells me it needs! Constant cycle.

  20. I’ve tried the coconut milk yogurt. It had hardly any protein in it and it was quite gelatinous. Not horrible, but not yogurt. Good idea mizing it in the smoothie!
    I so agree with you on the butter! I’m trying to convert people from “I Can’t Believe It’s Not Butter” spray to real, true butter.

  21. I hear ya on the coconut milk yogurt. I tried a brand of grassfed cream top and I wanted to love it just for the benefit of the cows, but the texture was just too weird for me. I never used to like yogurt until I started eating Greek and that’s really the only kind I can stand – maybe because it’s thicker – more like pudding?

    I’ve been trying to incorporate real butter back into my diet – like you I thought real butter was evil and would cause me to have poor health, etc, etc. I also only ate egg whites for a long time and now have been eating free-range eggs – yolks are amazing.

    I also stayed away from avocado for a long time and was really into the fat free, sugar free stuff until, again, I’ve been reading that stuff is AWFUL for you.

    I’m reading “Eat the Yolks” and its really starting to change my outlook on things.

  22. That is so funny about you and butter–because I am the EXACT same way you used to be and no one understands! I avoid butter at ALL COSTS, but it’s because I cannot stand the taste or texture haha at least you were able to change though 😀
