Hello, hello!
I’m so glad it’s Friday because it means the official start of our vacation is just hours away. Hooray! I can’t wait for Mal to get home so we can celebrate. Ireland, here we come!
Breakfast
This morning’s breakfast was a delicious one. I’ve been on a little bit of a sunflower butter kick lately, so I experimented with it in some pancakes this morning and, oh my goodness, they turned out really wellββlight, fluffy, satisfying, delicious, and nutritious.
Sunflower Butter Pancakes
Ingredients:
- 3 tbsp sunflower butter
- 2 eggs
- 1 banana
- 1/2 tsp cinnamon
Directions:
- Combine ingredients in a food processor (or by hand).
- Pour batter onto a prepared skillet or fry pan.
- Heat each side of the pancake until it is cooked all the way through.
- Serve immediately with fresh fruit, maple syrup, or your other favorite toppings.
Makes 4 pancakes
Workout
After eating breakfast and blogging about running, I felt really motivated to throw on my sneakers and go for run. I thought about doing a long training run in preparation for the ZOOMA half marathon, which is just 7 weeks away (yikes), but the weather was cold, gray, rainy, and, well, just plain crappy, so I opted for a 5-mile run instead.
I got my legs moving and trucked along for 5 glorious miles. Despite the weather, it was a really great runββdefinitely one of those that reminds you why you love running so much.
Snack
After my run, I quickly showered and then hopped in my car to run some last-minute errands for our trip. I made some green juice to take with me for the ride. In the mix: spinach, cantaloupe, lemon, celery, carrot, cucumber, and ginger.
My errands included a very expensive trip to CVS to refill all of my prescriptions. I’m weaning down to 10mg of Prednisone tomorrow, so there’s a chance my GI track will spaz out and start to flare again, so I definitely want to be prepared when I’m in another country.
When I got home from running errands, I finished up a couple of blog things for next week. I won’t be blogging from Ireland, but I have a bunch of posts (and giveaways) ready to publish while I am away. Be sure to check in!
Lunch
A little while later, my stomach started to grumble. I’m not someone who forgets to eat a meal (ever), but I almost forgot to eat lunch today. At this point, I realized just how hungry I was, so I whipped up a quick egg sandwich with guacamole and Garden Vegetable cream cheese spread from The Laughing Cow. I actually made this same sandwich for lunch yesterday and loved it so much, I had to eat it again todayββplus, it was really quick, and I needed food in my stomach immediately!
After lunch, I ate a few bites of vanilla cake batter coconut butter straight from the jar. (I may or may not be giving away some Nikki’s Coconut Butter next week. Just saying!)
Snack
And now while I type this post, I’m snacking on some white bean and basil hummus with rice crackersββboth of which are from Trader Joe’s. Mmm… such a delicious afternoon snack!
Did anyone else see this week’s episode of Parks & Rec when Ron Swanson eats a banana? I thought it was absolutely hilarious and was seriously busting a gut laughing so hard. Mal and I actually replayed the clip a couple of times because we thought it was so funny.

I need to get to trader joes, those rice crackers look a lot thicker than the ones I get. CVS trips can be so ridiculous, I get those multi-vitamins on amazon in a huge 120 pill bottle. I love that they have probiotics too, so they dont’t mess with my stomach. They sort of taste like I’d imagine algae or chlorophyll would taste though π they have a great flax and fish oil one as well!
I must have that coconut butter. Googling it right now π

I like the sunbutter too! I’ve never had crunchy though because I’m not sure what the texture is like? Crunchy PB had peanuts in it but sunflower seeds are so small, are there whole seeds in it?

Ron Swanson is my personal hero and that scene was amazing. Equally amazing: his exercise comes from “lovemaking and woodworking.” Love it love it. π

I LOVE flavored nut butters. My favorite is actually a cookie butter. It has peanuts in it so it can pass as healthy π

I love a good pancake recipe! I just bought sunflower seed butter last week so these are definitely high on my list to make!

I’ve noticed that you make your own juices – am thinking of getting a juicer and am hoping you can give me some hints and tips. I think it would be great for making nutritious snacks and for getting more fruit & vet. What’s your advice on appliances, recipes or nutritional benefits (normal snacks or workout recovery). Thanks!
