One of my favorite ways to deal with the Sunday Night Blues is to watch a movie with my hubby on the couch in my PJs. It’s a nice way to relax and unwind before the busy work week begins. Mal is waiting patiently for me to start our Sunday night movie, so I need to make this post quick!

Dinner

For dinner tonight, I took a bunch of leftovers in the fridge (chicken breast + sausage), chopped them up, and threw them in a pot of couscous along with sliced mushrooms, olive oil, and minced garlic.

Then, I threw a few scoops of it on top of a big salad.

And topped it all with balsamic vinegar.

It was a fast, delicious, and nutritious dinner in just minutes!

For dessert/tomorrow morning’s breakfast, I whipped up a batch of Blueberry Chocolate Protein Muffins. This recipe will likely appear in my book, so I can’t share it on my blog. Sorry, guys!

Enjoy your movie with your husband šŸ˜€

I agree, doing something relaxing on a Sunday night to get your mind off of the fact that the work week starts tomorrow helps the blues. Speaking of which, I’m off to watch a movie myself. Enjoy your evening. šŸ™‚
