One of my favorite ways to deal with the Sunday Night Blues is to watch a movie with my hubby on the couch in my PJs. It’s a nice way to relax and unwind before the busy work week begins. Mal is waiting patiently for me to start our Sunday night movie, so I need to make this post quick!
Dinner
For dinner tonight, I took a bunch of leftovers in the fridge (chicken breast + sausage), chopped them up, and threw them in a pot of couscous along with sliced mushrooms, olive oil, and minced garlic.
Then, I threw a few scoops of it on top of a big salad.
And topped it all with balsamic vinegar.
It was a fast, delicious, and nutritious dinner in just minutes!
For dessert/tomorrow morning’s breakfast, I whipped up a batch of Blueberry Chocolate Protein Muffins. This recipe will likely appear in my book, so I can’t share it on my blog. Sorry, guys!

I love that you don’t have to make baking such a big task – you seem to be able to whip up baked goods in minutes! I’m not so sure blueberries and chocolate sound like a match to me though. Enjoy your movie!

Muffin looks POPPIN but I knew they were full of protein cause of that glaze look on it! I swear! All protein baked goodies have that look!
