One of my favorite ways to deal with the Sunday Night Blues is to watch a movie with my hubby on the couch in my PJs. It’s a nice way to relax and unwind before the busy work week begins. Mal is waiting patiently for me to start our Sunday night movie, so I need to make this post quick!
For dinner tonight, I took a bunch of leftovers in the fridge (chicken breast + sausage), chopped them up, and threw them in a pot of couscous along with sliced mushrooms, olive oil, and minced garlic.
Then, I threw a few scoops of it on top of a big salad.
And topped it all with balsamic vinegar.
It was a fast, delicious, and nutritious dinner in just minutes!
For dessert/tomorrow morning’s breakfast, I whipped up a batch of Blueberry Chocolate Protein Muffins. This recipe will likely appear in my book, so I can’t share it on my blog. Sorry, guys!
I have the Sunday blues right now! Luckily, True Blood is on and making it better. 🙂
I love that you don’t have to make baking such a big task – you seem to be able to whip up baked goods in minutes! I’m not so sure blueberries and chocolate sound like a match to me though. Enjoy your movie!
I just started a new “tradition:- Movie Monday. $5 for movies on Mondays at the theatre. Makes Monday a little less “blah!”
Enjoy your movie with your husband 😀
haha those muffins look like they have the weirdest texture. I guess it’s the protein. Have fun relaxing watching movies!
I can eat anything on a bed of lettuce 🙂 My Momma is my movie buddy–we always hit up Red Box when I’m home. Which movie are you watching??
Geez..I’ve wanted a healthy blueberry muffin recipe for so long! Guess I’ll have to wait a little longer!
Lovely looking muffins!
Well I guess I’ll just HAVE to buy your book! 🙂 Those look amazing!
Blueberry chocolate muffins? With protein?!? You are amazing. Just thought I’d let ya know!

What a great leftover meal! So creative!
I didn’t know you were putting together a book. Congratulations.
I hate the SUnday night blues too- and reading this post makes me regret that I just spent the past hour and a half doing work, ugh! I know it will make tomorrow morning less stressful though.
Sunday blues are the worst, have fun watching a movie with Mal.
Ugh I am definitely feeling the Sunday blues….where did the weekend go?!!?
Those muffins look awesome!!!! Can’t wait for the recipe!
Are those chocolate chips or blueberries?
Those muffins sound pretty delicious!
I agree, doing something relaxing on a Sunday night to get your mind off of the fact that the work week starts tomorrow helps the blues. Speaking of which, I’m off to watch a movie myself. Enjoy your evening. 🙂
Sounds like a good way to cure the blues =)
The muffins look delish! I settled for a handful of mini eggs for my dessert.
Everything sounds delicious — nothing like a fantastic meal to make Sunday evenings a little cheerier. 😀
I love that quick and easy meal. Couscous cooks up so quickly and makes a great grain.

The muffins look great; I’m liking the protein boost that seems to be infesting the health blogosphere lately. Congrats on the book progress.
Lovely looking muffins! For the first time in months I didn’t get the Sunday night blues last night…I don’t have uni today, I’ve finished teaching!! So much revision to do though..but movies are always a great way to unwind 🙂
Oooh, you baked-goods temptress you! Hope the movie was wonderful… can’t wait for the book!

Your muffins look great! Looking forward to reading the recipe. 🙂
Muffin looks POPPIN but I knew they were full of protein cause of that glaze look on it! I swear! All protein baked goodies have that look!
Not sure where you live…but do you have a restaurant in food courts, MmmmmmmmMuffins! ? that’s what your post made me think of.
The couscous/salad is a great idea. I might whip something up like that tonight or tomorrow for lunch for the week.
