Mastermind Weekend 1/16

Hey there!

I'm Tina

I’m the owner of Carrots ‘N’ Cake as well as a Certified Nutrition Coach and Functional Diagnostic Nutrition Practitioner (FDN-P). I use macros and functional nutrition to help women find balance within their diets while achieving their body composition goals.

An in-depth, 4-week reverse dieting course for women who feel like their metabolism has slowed down, think they might have hormonal imbalance and can’t lose weight no matter what they do.

Wow-wee! What a weekend! I sort of wish that I could relive the whole thing. It was such a blast from beginning to end!

This morning, Mal and I slept in until about 8:30 and then headed downstairs to grab breakfast at the hotel restaurant.

To be honest, I didn’t have high expectations for breakfast after reading the menu, but I was pleasantly surprised when my meal was served. I ordered the fried egg sandwich, which came with homefries on the side.

The egg sandwich was served with bacon, roasted tomato, and plenty of cheddar cheese. The sandwich was massive, so I ended up removing the bacon and one of the eggs (there were 2!), but, somehow, I still managed to eat practically all of it! It was THAT good– especially the greasy, grilled sourdough bread with loads of cheese. 😉

Breakfast held me over for hours and hours, so when lunchtime rolled around, I just made myself a small snack: two pieces of toasted Carrots Raisin Manna Bread with butter smeared on top.

When the Manna Bread folks asked me to sample some of their breads, I jumped at the chance. They had some many delicious-sounding varities: Carrots Raisin, Banana Walnut Hemp, Fig Fennel Flax, and Cinnamon Date. Mmm! Plus, the website describes their breads as “moist, delicious, cake-like…and simply heavenly!” Um, yes, I would like to try some Manna Bread!

The Carrot Raisin Manna Bread tasted just like a carrot raisin muffin– same texture, consistency, flavor. It was basically muffin bread. Delish!

After my indulgent weekend (week, month?), I kept dinner light with a big salad, topped with canned salmon and balsamic vinegar.

Raw veggies never tasted so good!

For dessert, I enjoyed a few caramels from the candy bowl.

It’s Sunday Movie Night, so Mal and I have plans to get into our PJ’s, chill on the couch, and watch our newest Netflix DVD: The Men Who Stare at Goats. Sounds like an interesting movie, right?!? (I think it might be time for me to take over our Netflix queue.)

Enjoy the last few hours of your weekend! Back to the grind tomorrow!

Good night!

  1. Sorry to report, but that movie was HORRIBLE! My husband and I almost fell asleep watching it – What did you think?

  2. Hahaha I can’t believe you removed the BACON! The internet just gasped in horror! I hope you had a great weekend relaxing! 🙂

  3. I too can’t believe you had the willpower to take off bacon that is right in front of you and not eat it!
You obviously have some superhuman powers…..!!!

  4. Sounds like you’ve had an AMAZING last few days, Tina! I’ve been away for a few days without the internet, so I had a blast catching up on all your adventures! Happy Belated Birthday, and you looked GORGEEOUS at the wedding!!

  5. Yeah, that movies was not for me…I hope you like it! I am so glad you had a great weekend! I need one of those too! The bread looks and sounds delicious! Enjoy movie night…we are doing the same with our boys and watching “War of the Worlds”!

  6. hey! just found your blog- looks great!!
that manna bread looks so amazing. i checked out the website, the banana one looks really good- but i pretty much love anything bannana!
    have a great day!

  7. Your breakfast looks super yummy 🙂 I love eating out for breakfast. It always seems like such an indulgence because it’s easy to make breakfast at home, but it’s my favorite meal to go out for!!

Your salad with salmon looks good too!! Do you ever use dressing out your salads??

  8. As the comments reflect, I had heard mixed reviews about that movie but ended up LOVING it! Jeff Bridges is one of my favorite (quirky) actors and George Clooney is always a hoot. It’s just not something you can take too seriously! If you have fun with it and listen for all the small (but hilarious) jokes, it’s really great!

  9. My husband picked out that movie for us to watch too. I ended up falling asleep. That really doesn’t say much, I tend to fall asleep during every movie we watch.

  10. Your weekend looks stunning, the wedding was beautiful, your dress was great, the after party looked like fun & your breakfast looks divine this morning

  11. That bread looks delicious, anything that is like cake is good for me! It looks very moist indeed. Glad you had a fab weekend, I hate it when good times have to come to the end.

  12. I didn’t get to comment earlier but i wanted to say that I absolutely loved your dress at the wedding- it’s stunning. and I have never heard of muffin bread before – sounds delicious!

  13. That manna bread looks sooo delicious – I’ve never seen it before! I looked on their site and unfortunately you can only order the bread in a pack of 8 loafs. And as much as I love my carbs, I don’t think my freezer can handle 7 loafs of bread, haha. I’ll have to stay on the lookout for it around here.
