I’m the owner of Carrots ‘N’ Cake as well as a Certified Nutrition Coach and Functional Diagnostic Nutrition Practitioner (FDN-P). I use macros and functional nutrition to help women find balance within their diets while achieving their body composition goals.


An in-depth, 4-week reverse dieting course for women who feel like their metabolism has slowed down, think they might have hormonal imbalance and can’t lose weight no matter what they do.

GAHHH! Somebody stop me! I want to register for a zillion races!

The exact same thing happened to me after the Arizona Marathon. My friend Monica even warned me not to go crazy, but I didn’t listen and ended up registering for 14 races after that. Fourteen races?! I am an insane person.


I already told myself I’m not going to register for so many races””mostly because it was a lot of time, travel, and money. My plan this time is only to register for really awesome races or ones that are close to home and super cheap. Here are some of the races that I am seriously considering:

Dinner was make-your-own tacos, which were requested by my wonderful husband. Mal had a serious craving, so he asked me to pick up the ingredients for tacos. Mal, your wish is my command.

For dessert, I requested chocolate chip cookies. Once again, I tried to healthify the recipe.

Healthier Chocolate Chip Cookies

Makes 15-18 cookies


  • 1/2 cup whole wheat flour
  • 1/4 cup rolled oats
  • 1/4 cup ground flaxseed meal
  • 1/4 cup sugar
  • 1/4 cup packed brown sugar
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 egg
  • 1 tsp vanilla extract
  • 1/4 cup canola oil
  • 1/4 cup chocolate chips


  • Preheat oven to 350*F.
  • Combine all ingredients in a large bowl; mix well.
  • Use a tablespoon to portion batter, roll it into balls, and flatten on a greased baking sheet, approximately 1-2 inches apart.
  • Bake cookies for 12-15 minutes.
  • Remove cookies from baking sheet and allow to cool on wire rack.
  • Eat and enjoy!

The flavor of these cookies was spot-on, but the texture was a little bit dry. Mal really liked them, so I guess they pass the cookie test.


This morning’s breakfast was sunflower butter, banana slices, chopped dates, and chia seeds on a whole wheat wrap.

On the side: iced coffee. I added coconut milk to it this morning. Mmm!

Be Thankful Challenge

I’m thankful for magazines. Not online magazines or those in tablet form. Real live magazines with pages that turn. I will forever love them.

What are your favorite road races? I’m looking for suggestions!

  1. I am running the Hyannis Half too! I ran the 10k they had last year in the snow/rain and loved it! Didn’t even mind the weather. I just ran my first half last weekend and loved it! I am definitely falling into the trap of wanting to sign up for every race I can get my hands on.

  2. Hi TIna Congratulations on NYC! Have you ever run Oleksak Lumber Half Marathon? I was thinking about this one also. I am running the Hyannis Half and either the Quincy HM or New Bedford HM on 3/18.

  3. Haha I am also in the market for some good spring races, although I live in Chicago so the Midwest would be better for me! I don’t have any good suggestions, but I’m sure the National Half will be great, I’ve heard nothing but good things about the Rock N Roll series!

  4. I’m the same way after I finish a race! I did a triathlon earlier this year and immediately after (despite previous denials that this would ever happen) signed up for a marathon. It happens 🙂

    I’ve got a ton of friends who’ve done reach the beach and absolutely loved it! Also, the Falmouth Road Race sounds like tons of fun. I’ve never done it, but it’s on my to-do list for next year!

  5. Your breakfast wrap looks so yummy! I strongly agree – I have quite an obsession with REAL magazines…that I’m thinking of just asking for magazine subscriptions for a fun bridal party idea…yes I’m THAT in love with them 🙂

  7. If you ARE looking for a travel race, the Nike Women’s in SF is ah-mazing! I ran the half a few weeks ago and as soon as I was done said I would be entering the lottery again next year. The course is hilly and hard, but the views are gorgeous and it is so fun to run with 20,000 women. It was well-organized, well-sponsored, and the expos before and after were great. It’s pricey, but instead of a medal you get a Tiffany Necklace. Bonus: October is the best month to visit NorCal; it is warm and sunny.

  8. I feel the same way-about races and about magazines! I have already signed up for 2 races since my marathon in October and want to sign up for a spring half. I also LOVE magazines, I think I will always buy the hard copies. Just so nice to hold and read! Oh well, I guess there could be worse addictions! 🙂

Haha, I’m reading this while adding a HUGE list of races to my schedule on Daily Mile. 🙂 The big ones I’m looking at are the Charlotte 50K (first 50K!!!!), New Orleans Marathon (March), & Charleston Half Ironman (April). Then I’m thinking of doing a trail running series (all runs under 8 miles) and duathlon sprint series. I’m not going to register for anything until January, but it sounds like fun! 🙂

    I am still loving the thankful challenge! Today I am thankful for my sister. She lives with my husband and I and anytime she talks about moving out it makes me kind of sad because whenever he works night shift she and i still have sleepovers, talk and laugh like we did when we were younger. Sounds a little cheesy but shes the best!

  11. YUM, taco night! I could probably eat mexican food every night for 2 weeks without getting tired of it.
    I love when you post upcoming local races! I just checked out the Old Fashioned 10 miler, it’s a week before I run the Disney Princess Half. Hmm…I need to get my training plan down on paper first before I decide though. I’m not sure if I want to do 10 mi, 12 mi, 10 mi for my last 3 long runs or what. For my first half I did a 12 miler a week before the race, but it ended up being faster then my race pace…go figure.

  12. Im the same way! I need a second job to cover my race entries and travel. Three of the races on your list are on mine. I’d love to do the Hampton Half and I am trying to convince a friend to run with me!

  13. Have you ever done the Martha’s Vineyard 20 Miler in February? My friends and I do it every year and we love it! It keeps us training through the winter and is a really beautiful race.

  14. You need to come to Houston to run the Houston 1/2 or Full Marathon……
    I did my 1st 1/2 at this race in January 2011 and I have been hooked ever since. Another one is the Galveston Mardi Gras 1/2 Marathon or Full – that was fun. Or maybe the San Antonio Rock N’ Roll 1/2 Marathon (not sure if there is a full)….I have heard it is challenging but fun. You would have a good time coming to Texas 🙂
    I’m looking forward to trying your cookie recipe for my husband and son. I am allergic to chocolate (yes I know 🙂 this is why I deserve to win the prize right?) so I will try another item in the cookies for me.

  15. Other local races to consider:
    -BAA Half Marathon: (I haven’t done it, but my regular running route is part of the course (Emerald Necklace) and it is beautiful!)
    -Amica Marathon (or half marathon): Gorgeous course in Newport, RI. I’ve run the half 2 years and I LOVE it!! Great time of year for a race (third week in Oct) and lots of support on the course.
    -Newburyport Half Marathon: This year was the 1st annual. Great time of year (last weekend in Oct), lovely course and lots of historic charm.
    -Another Newburyport option: (All ladies, woo!)
    -For a summer race: 10 mile Blessing of the Fleet Road Race in Narragansett, RI.

    All great races! Check them out…and congrats on your marathon!!

  16. National Half!!! I’m doing the full and can’t wait! I had the same problem (I ran MCM as my first marathon)…I can’t stop signing up for races! I’m doing a 10K this weekend but will be going SLOW because my legs have definitely not recovered yet.

  17. I’m so excited for the RNR USA half marathon! I only live about 45 min from DC, and I’ve only done 5ks in the city before. Every time I go into the city, I have this weird desire to run it (such cool sights to take in and keep me distracted!) so I’m psyched to finally get the chance.

  18. My favorite race is the Vermont City Marathon & Relay in Burlington at the end of May (memorial day weekend usually)! I’ve done the 2 person relay and the 3-5 person relay, which is really fun because you have a team, then you can enjoy the huge post-race stuff at the waterfront at the end. The last leg of the relay is the best because you get to finish at the waterfront with all the crowds!

  19. hey there.. the cookies look great.. they don’t even look dry, i’ll try them out, maybe add some butter. 🙂 i’ve never tried sunflower butter, going to whole foods today, perhaps i’ll pick 1 up. i love mexican too. 🙂 keep up on all the running, i agree, you do it for those who can’t, very inspiring!

  20. I ran the New Bedford half last year. It was my first half marathon and a great experience! Well organized for a small race…plus you get some “celebrity” sightings because it’s a big Boston Marathon training run — I sat next to Rick and Dick Hoyt at breakfast!

  21. I thought that the Detroit Half Marathon was really cool. You start in Detroit and run to Canada and then back to the US. Honestly, the first 8 miles are a breeze, I didn’t even feel them.

  22. Half at the Hamptons is a favorite (I live in Newburyport) Flat course, along the ocean, but can be a bit windy (I’ve only spectated.. from inside) I might run it in 2012 as well, Club LOCO puts on great, well organized races!

  23. a) I ran the DC National Half a couple years ago and loved it so much, I’m running it again this year. It’s perfect just-spring weather, and runs through the monuments. It also might coordinate with the cherry blossoms, which is also a win.

    b) I just ran the SF Nike Women’s Marathon on October. They have a half as well, it wouldn’t be until next fall, but it was an amazing experience – breathtaking california views, all women field, albeit the “hills” were definitely mountains.

  24. so many responses! anyway, the half at the hampton’s isn’t anything great, the course isn’t all that exciting or maybe it’s that ran that race too many times…..

    i just signed up for this crazy race!!

  25. Made these cookies tonight…. they were a total hit!! I didn’t have any flaxseed meal, so I used corn meal instead – worked great, tasted awesome! Hopefully it still kept the cookies, healthier. lol 🙂
    I’ve always wanted to run in a race…. but I’m super nervous. With two kids, I can only manage to squeeze in runs (on the treadmill) while they nap… I haven’t been able to venture outdoors & pound the pavement. I vow though, to run races some day…. many, many races!
