This morning, Mal and I spent a solid 3 hours cleaning and organizing our apartment from top to bottom. Seriously, we cleaned every nook and cranny of our place! We reorganized all of our closets, mopped the floors, vacuumed the crumbs out of our kitchen drawers, whipped down the door frames and cabinet fronts, and replaced our old shower curtain and rug in the bathroom. Our apartment did need a serious scrubbing, but I suppose it was our spring cleaning for the year.

We also hung our new mirror, which we got for free from our friends’ neighbor, who was going to throw it out! Trash to treasure! :mrgreen:

Breakfast

I woke up famished this morning, so I snacked on an iced coffee and a Quaker Simple Harvest bar while Mal slept in. We planned to make a yummy breakfast together, so I didn’t want to eat without him. 

Yesterday, my aunt gave us a dozen fresh eggs from her chickens, so our Sunday morning breakfast was an easy decision. 

I love all of the different color egg shells!

For breakfast, I made a fruit salad with cantaloup ($0.79 each at Stop & Shop), strawberries, pineapple, and red grapes. 

Mr. Mal made the eggs and toast. My egg yolk was SO flavorful! 

Lunch

Mal and I met a couple of our friends for lunch at the Cambridge.1. in Harvard Square this afternoon. I had a massage appointment scheduled for mid-afternoon right down the street, so the timing and location for our late lunch actually worked out quite nicely. 

Cambridge.1. is a nice, little restaurant/bar. The minimalist decor gives the place a casual and relaxed feel. The menu barely fills up a small piece of paper and is limited to pizza and salads, but the beer and wine selection is quite impressive. 

For lunch, the four of us split a flatbread pizza with grilled chicken, roasted red pepper, mozzarella, and romano cheese. It was good, but nothing special. It also took a really long time to make! Our “5 minute” pizza took 30 minutes! 

I ate two pieces of the flatbread pizza. 

Dinner

Dinner at home was Creamy Parmesan Risotto mixed with sauteed mushrooms and edamame. For some added volume, I topped a bed of salad greens with the risotto and a few grape tomatoes. I love quick and easy meals like this, especially when they are also delicious and filling. 

The Parmesan Risotto was soooo incredibly rich and creamy. Mal and I both loved it and went back for seconds. This packaged risotto is made with arborio rice, Parmesan and cheddar cheeses, onion, and garlic. Delish! 

For dessert, I am planning to enjoy my usual chocolate-peanut butter obsession while watching TV in my PJs with my hubby. Sounds wonderful, doesn’t it!? Today was surprisingly exhausting!
