Happy Monday, folks! šŸ˜Ž

My weekend was so jam-packed, I never had a chance to get to the grocery store for our weekly shopping. So, as soon as I finish this post, I am heading straight there. There were slim pickings in our kitchen this morning, but, thankfully, we always have old-fashioned oats in our pantry! šŸ˜‰

In the mix:

  • 1/4 cup old-fashioned oats
  • 1/4 cup spelt flakes
  • 1 tbsp ground flaxseed meal
  • 1/2 tbsp chia seeds
  • 1/4 cup canned pumpkin
  • 1/2 cup non-fat milk
  • 1/2 cup water
  • 1/4 tsp cinnamon
  • 1/4 tsp vanilla extract
  • 2 scoops of Teddie peanut butter
  • Raisins

I also enjoyed some iced coffee with vanilla soy milk with breakfast.

44th Pillsbury Bake-Off Contest

So, I have some exciting news for you guys! Have you ever heard of the Pillsbury Bake-Off Contest? If not, here’s what it’s all about…

One finalist with a simple recipe idea will become a millionaire at the Bake-OffĀ® Contest in April, 2010. It could be a new twist on a family favorite or a variation of a dish enjoyed at a restaurant. Maybe it’s a recipe inspired by leftovers in the refrigerator or the desire to try a new product. As finalists created their original recipes, they considered not only taste, but appearance, creativity and how the recipe will appeal to families across America.

Well, the nice folks from Eggland’s Best have asked me to blog about the event, so I will attend the Bake-Off in Orlando, Florida this coming weekend! :mrgreen: A number of the contestants are using Eggland’s Best eggs in their recipes, so the company doesn’t want to miss a thing! Who could blame them!

So, starting next Saturday, I’ll be covering the whole event from start to finish, so be sure to tune in. It’s gonna be a blast!
