Compared to yesterday, today was such a low-key day. I ate some good food, did a little work, and spent time outdoors with M & m. Nothing too exciting happened, but it was just what I needed.
I’m really starting to appreciate having downtime in my life. Usually, I’m go-go-go all of the time, like the (insane) summer that I had and the past few weeks (e.g. buying a house,Ā moving, marathon training, illness, traveling, finishing my book). Nowadays, I totally welcome simple living.
Breakfast
After sleeping in a little bit, Mal and I made a big Sunday morning breakfast.
We had veggie and Swiss omelets withĀ Hickory Farm sausage and toasted bagels withĀ Apple, Almond, and Cranberry conserves on the side. I also drank an iced coffee with eggnog.
Lunch
I spent the rest of the morning catching up with emails and getting a head start on my blog posts for NuVal next week. Eventually, my stomach started to grumble, so I reheated some leftover collard greens and walnuts for lunch.
I also had a bowl of granola with soy milk. (I later went back for a second bowl. I can never stop at just one!)
After being cooped-up inside all day, Mal and I took Murphy for a long walk in the woods. We were all in the mood for a little exercise.
We walked until the sun set and our hands were freezing cold. A leisurely walk with my boys was a really nice way to end my Sunday. I’m telling ya, simple living is where it’s at! š
Dinner is next on the agenda!

Gorgeous sunset! š
I have the hardest time sitting still – even if I’m at home, I’m constantly doing something – cooking, baking, cleaning, laundry… I don’t know why I can’t just sit. I associate it with being lazy for some reasons – it sneeds to stop!! š
Love the simple living way of mind š
